Pulled Pork

This is an inexpensive, versatile and delicious meal.

One large pork shoulder.

Salt, black pepper and garlic powder.

One large aluminum pan 

Two sheets aluminum foil

Preheat the oven to 350 degrees

Season the pork liberally with the salt, pepper and garlic powder.

Place in the aluminum pan and cover with the foil

 Place on a cookie sheet for support and place in the oven.

 Cook it for at least five to six hours.

 Take out of the oven and cool slightly.

Be careful taking it out of the oven because there is about three inches of juice and fat that has rendered off.

 With two forks take all the meat off and discard the fat.

 Then start taking the pork apart with the forks and shredding the meat into long strands.

This is the tough part because I could eat at least half of the meat.

 Thats it.

 I serve this a million ways.

 One of my favorite ways is to put the warm meat on top of a salad.

 I have made Bolognese sauce, chili,  stir fry and the best as topping on nachos.

 It also makes a delicious BBQ sandwich.

The pork can be put into small bags and frozen and then just take them out when you want.

Toasted bagel with lox and cream cheese

This is one of my favorite sandwiches but it does take a little prep time.

One fresh bagel

butter

cream cheese

sliced tomato

capers

Thin sliced red onion or sweet yellow

Thin sliced cucumbers

arugula

good deli thin cut nova lox

Lightly toast the bagel

butter one side

spread cream cheese on the other

Start layering the rest

One or two slices of lox

One slice of tomato

One slice of onion

Four or five slices of cucumber

1/4 teaspoon of capers

Small handful of arugula

This is so great.

Sometimes I use baby bagels and make a tray of open face appetizers

Salt and Vinegar Baked Potatoes

I saw these on TV and had to make them.

12 small red or small white potatoes

3 tablespoons salt plus more for sprinkling

Black pepper

3 to 4 tablespoons oil

One tablespoon apple cider or malt vinegar per potato.

Wash all the potatoes.

Place them in a pot with water and 3 tablespoons salt.

Boil the potatoes till they are fork tender.

Drain and dry the potatoes.

Preheat the oven to 450 degrees

Put the canola oil in the bottom of a cookie sheet.

Place the potatoes on the pan and coat them with the oil.

With the bottom of a glass, press down on the potatoes till they are about 1/2 inch thick.

They aren’t very pretty but cute.

Sprinkle with salt and pepper and bake for ten to fifteen minutes.

Take out of the oven and turn the potatoes over.

Pour the vinegar over each potato

Sprinkle with a little more salt

Bake in the oven until the potatoes are crisp.

Tastes just like salt and vinegar potatoes chips

Serve with ketchup, hot sauce or even sour cream.

The vinegar really adds a great taste to the potato.

I served these as a side dish.

BUT

Next time I make them I would add some fresh parsley, minced garlic, sliced scallions, a little more vinegar . Maybe a squeeze of lemon or some lemon zest would be nice.

This would be a delicious warm potato salad.

Great for the summer because there isn’t any mayonnaise.

Okay girls listen.

My boys are not only cute and educated but have all turned into great cooks.

And they like to cook.

Last night my oldest son made me dinner.

One of the most delicious steaks ever was served to me.

He cooked it perfectly.

This is where the 2-2-8 comes in.

Heat a skillet and add one tablespoon olive oil and one tablespoon butter.

Season the boneless rib eye steaks with salt and pepper.

Make sure the steaks are defrosted and at room temperature.

Place the steaks in the very hot oven proof skillet for 2 minutes then turn over for another two minutes.

Place the entire oven proof skillet in the preheated 450 degree oven for 6 minutes the open the door and shut off the oven for another 2 minutes totaling eight minutes in the oven.

Fabulous, juicy steak.

This was such a fast meal to prepare.

We had baked potato and a huge fresh vegetable salad with blue cheese dressing.

Spinach and White Bean Soup

I usually make this as a vegetable but I have a cold and need soup.

Two tablespoons oil

5 cloves of chopped garlic

One pound of spinach

Two can of small white beans, drain half of the liquid

1/2 teaspoon salt

1/4 teaspoon red pepper flakes

Two cups chicken stock

Saute the garlic in the oil till soft, not brown.

Add the beans

Add the spinach and the chicken broth

Season with the salt and red pepper

It is a fast soup with a lot of flavor

Jolly Johns Grinder

This is a flash from the past.

When I was young there was a drive thru called Jolly Johns.

They had burgers, fries, fish and chips, and these grinders.

I didn’t have much money so I would always get the small fries.

Since I was resourceful, I would get my sisters to pool their money to buy a grinder.

This was a special treat.

This grinder was so skinny but hot and cheesy and the best ever.

Since I always cooked I was determined to copy this simple recipe.

What I found out is that everything has to be sliced paper thin and the bread has to be crusty.

Now this is a ham and cheese but special.

One loaf of 12 inch french bread

5 thin slices Genoa salami

5 thin slices imported ham

3 slices american cheese cut in half

One thin slice of provolone cheese cut into four pieces

1/4 thin sliced julienne red pepper

3 to 4  thin slices small onion

1/2 small thin sliced tomato

One teaspoon canola oil

Slice the french bread in half and place on a piece of aluminum foil

Drizzle the oil on one side of the bread

Start assembling  the sandwich.

Layer the salami, ham, cheese, red pepper, onion and tomato.

The sandwich is not very thick.

Wrap it in the foil

Bake in a preheated 450 degree oven for ten to fifteen minutes until the cheese is melted

Cut the peppers, onion and tomatoes on a mandolin.

It takes no time at all and everything is the same thickness.

Make sure your bread is not thick. You want a thin crusty bread.

I did find the french bake and serve bread. Bake this first, then fill it and bake again to melt the cheese.

This is not a fancy sandwich but it is so good.

So all the nights I wished for the grinder are over.

Valentines Day Overload

Valentines Day again and I turn into a crazy person.

Everything  is pink, red, white or heart shaped.

Last night I made the cookies with my grandson.

Today we made the heart pizza, plus the heart shaped pancakes, eggs, grilled cheese sandwiches and the pink cranberry juice.

It was a blast but I’m so tired.

The cookies were a chocolate dipped shortbread

The pizza was your normal quick pizza decorated with a muenster cheese arrow

Try them next year.
