Carrot Ginger Dressing

Carrot ginger salad

My children introduced me to Japanese food years ago.

I always order a salad before the Sushi.

My choice is either a ginger or seaweed salad.

Every recipe I tried didn’t do it, so I combined a ton of them.

I finally figured out how to make a dressing I love.

2 or 3  carrots or one large jar of baby food carrots

2 cloves of garlic

One small onion

Two inches of peeled ginger

1/2 teaspoon black pepper

3/4 cup canola oil

1/4 cup sesame oil

1/2 cup apple cider vinegar

1/4 cup soy sauce

One tablespoon honey maybe a little more to taste

Put the carrots, ginger, garlic and onion in the food processor and pulse till smooth. Make sure it is like paste.

Add the oils, vinegar, soy sauce, honey and pepper.

Pulse till everything is mixed well.

It is a pretty orange color.

Drizzle over iceberg lettuce, scallions, small cucumbers and red peppers.

Sprinkle with sesame seeds.

This also tastes great on lettuce wraps, chicken and boiled rice.

Strawberry, Blueberry Muffins

Blueberry Muffin

I had a box of strawberries, about three cups and a cup of blueberries leftover.

Nothing ever goes to waste.

I washed and dried the fruit.

Cut the strawberries up into 1/2 inch pieces.

Sprinkled with sugar and set them aside.

Preheat the oven to 375 degrees

Line 12 large muffin cups with  pretty muffin liners.

Whisk together

2 cups flour

2 teaspoons baking powder

1/2 teaspoon salt

Set aside

Beat together till the butter and sugar are mixed well

Add the vanilla and almond extract

1/2 cup unsalted soft butter

One cup white sugar

One teaspoon vanilla extract

1/2 teaspoon almond extract

Add the flour mixture and sour cream

One cup sour cream

Take out half a cup of the strawberry mixture and all the blueberries and set aside

Mix the remaining berries with two teaspoons of flour and add to the batter.

Spoon the batter into the muffin tins.

Fill at least 3/4 the way up.

Spoon the remaining berries on top

Bake for 30 minutes

Make sure they are cooked because the berries make them very moist.

 

 

Key Lime Cookies

Key Lime Cookies

Pillsbury did it again.

The Key Lime Cookie mix is delicious. I followed the directions, almost.

The only addition I made was to add one tablespoon of lime zest.

These cookies are great plain or sprinkled with some powdered sugar.

Thank You Pillsbury for another easy delicious mix.

Mozzarella Salad

Mozzarella Salad

Fast, Easy, Delicious.

Could I ask for more???

Two big tomatoes or one box of grape tomatoes

Two containers of drained mozzarella pearls

4 to 6 tablespoons olive oil

1/2 teaspoon garlic powder

1/2 chopped vidalia onion

1/2 teaspoon oregano

1/2 teaspoon salt

6 fresh basil leaves.

arugula

Dice the tomatoes

Mix everything together except the arugula.

Place the arugula on a plate and scoop four or five tablespoons on top.

Mix together

Save the tomato mixture in a container for more salad, a pizza or garnish for grilled fish or meat.

This can also be mixed in with pasta .

It is so good.

By the way everyone needs to eat it because you reek of garlic and onion.

Steak Salad

This is a go to meal for the entire year.

One portion of any type of salad

One cup or less of grilled sliced meat

Grilled onions

One slice of grilled dough with melted cheese

Put everything together and enjoy

 

Chicken Avocado Sandwich

Chicken Avocado Sandwich

I had three small chicken cutlets in the freezer.

Not enough for really anything but a delicious sandwich.

Three small chicken cutlets, pounded so the meat is an equal thickness.

One egg

1/2 cup seasoned bread crumbs

1/4 teaspoon garlic powder

1/4 teaspoon salt and pepper

Heat a pan with olive oil

Mix the egg with the garlic powder, salt and pepper

Dip the chicken in the egg then in the bread crumbs

Place in the hot oil on medium high

Cook till brown on one side then flip and cook threw till done.

Three fresh buns

One teaspoon of mayo on each side

One tablespoon ketchup

Three small containers of spicy avocado

Arugula

Sliced onion

Just assemble everything

Buns, mayo, ketchup,avocado,onion, arugula and chicken

Great lunch or quick dinner.

I added a slice of mozzarella cheese and sweet pickles

Caramelized Onion and Cheese Quiche

caramelized onion and cheese quiche

This is a reliable outstanding standby.

One deep dish pie pan. Do not use a regular pie dish because the filling will not fit.

One pie crust, rolled out to fit the dish with a small edge.

6 eggs

2 cups light cream

pinch of nutmeg

1/2 teaspoon salt and pepper

2 sliced onions

Two tablespoons butter

1/2 teaspoon salt and pepper

1/2 teaspoon sugar

3 slices white american cheese

3 slices muenster cheese

3 slices yellow cheddar

3 slices swiss cheese

3 slices Hoffman’s cheddar cheese

Put the onions, butter, salt, pepper and sugar in a pan and slowly caramelize the onions.  This takes at least twenty minutes. Cook them slowly because they will burn and you do not want that flavor.

Heat the oven to 400 degrees.

Place the pie crust in the pie pan.

Layer all the cheese.

Put the onions on top.

Mix the eggs with the cream, salt, pepper and nutmeg.

Whip the eggs very well but not frothy.

Pour the eggs on top of the onions.

Place the pie plate on the bottom rack in the oven.

Bake for one hour or until the pie stops jiggling.

Better to over cook the quiche then to under cook it.

I served this with the BLT Salad, a toasted crumpet and fresh fruit.

It was a pretty good brunch if I have to say so myself.
