The Long Cheeseburger

The long Cheeseburger

Who said a cheeseburger has to be round.

I went shopping and bought these delicious roasted garlic baguettes

I also bought fresh hamburg

Let the games begin…

I sliced the bread and slightly toasted it with just a little butter

Form the beef into a long cylinder and fry it in a drop of olive oil, salt and pepper till medium

Place a slice of american cheese on top

On one side of the bread spread mayonnaise, slices of tomato, slices of red onion and dill pickles

Then place the burger, arugula and lots of ketchup

Close everything up and start eating with at least ten napkins

Chicken Pesto Tortillini Salad

Chicken Pesto Salad

I had made a bunch of pesto and froze it.

I took out one, one cup container.

I wanted to clean out my freezer and this was on the list to use with  a one pound package of boneless chicken and a two pound package or cheese tortillini.

Boil the tortellini according to the package directions.

I always undercook mine because I like them chewy.

Rinse and drain

Place into a large bowl and add half the pesto  then toss.

Combine the chicken, one large red pepper and one large red onion with 2 tablespoons of olive oil, salt and pepper.

Grill till everything is cooked well.

Slice everything into 1/2 inch pieces and place over the tortillini.

Add the rest of the pesto and toss

Add chopped parsley for garnish and a heavy sprinkle of parmesan cheese.

This can be served hot or cold.

Fresh Tomato Cheese Pizza with Asparagus and Prosciutto Ham

Asparagus Pizza

One pound pizza dough

Crisco to put on the pan

3 cups seasoned fresh tomatoes

One cup cut asparagus

8 slices diced cut ham

13 slices Muenster cheese slices

9 diced string cheese sticks

1/2 teaspoon oregano

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

1/2 teaspoon salt

1/2 diced onion

6 basil leaves

3 tablespoons olive oil

Dice three cups of tomatoes and season with oregano, garlic powder,basil, onion, salt, pepper and olive oil.

Grease a pizza pan with the Crisco.

Use a very thin layer.

Stretch out the dough to fit the edges, working with your fingers.

Place the slices of Muenster cheese on the dough in an even layer.

This is the secret.

If the tomatoes are watery, put them in a saucepan and cook the water off by bringing the tomatoes to a boil and watching it closely. It should look a little dry.

Stir often, then cool and put it on the dough.

Sprinkle the asparagus, ham and diced string cheese over the pizza.

Finish with a drizzle of olive oil

Bake in a preheated 450 degree oven for about 15 minutes but check after ten minutes because all ovens are different.

Cook on the bottom shelf of the oven.

 

 

Barbecue Pulled Pork Sandwich

BBQ Pork Sandwich

If you have never made a slow cooked pork stop what you are doing and make one.

After I pulled the pork , my entire family ate well.

I had about four cups of meat leftover so I had to do something with it.

I put one chopped onion in a frying pan and cooked it for two minutes

Add the meat into a frying pan and slowly heat it

Then  add about 3/4  cup of barbecue sauce.

Toast 3 to 4 small french breads  with just a little butter

Put two slices of cheese on each side of the bread

Add one cup of the barbecue pork and several dill pickle slices

This is a sandwich to remember

 

Won Tons

Won Tons

All summer I have been craving Asian food so I have been trying new recipes.

Won Tons are one of my favorites.

This is a simple recipe  that I changed just a little.

One package of Nasoya WonTon Wrappers

One pound of ground chicken, pork or shrimp

Two tablespoons scallions

One small clove of garlic

One tablespoon fresh ginger. Only use fresh.

One tablespoon sesame oil

One tablespoon soy sauce

One egg

1/2 teaspoon black pepper

1/4 teaspoon salt

Two diced scallions for garnish

Place the ginger, garlic and salt in the processor and pulse till chopped well.

Add the diced scallions, egg, soy sauce, sesame oil, salt and pepper.

Mix well

Add to the ground chicken and mix well again.

Lay out all the won tons and place one teaspoon of filling on each.

Wet the edges of the won ton with water, make a triangle and seal it well

Take the two corners of the triangle and seal them together.

Bring two cups of broth to a boil and add ten wontons.

Cook about 5 minutes then let it simmer for 2 more minutes.

The chicken inside the won ton has to cook

Place some pea pods in a bowl and place the won tons with some broth

Garnish with another tablespoon of diced scallion

I freeze these on a cookie sheet than put them in freezer bags to store in the freezer for a very fast and easy soup.

 

Mushroom and Goat Cheese Pizza

Mushroom and Goat Cheese Pizza

One pound of pizza dough

One pound of sliced mushrooms

Two sprigs of  fresh thyme leaves about one teaspoon

Two tablespoons olive oil

One diced onion

2 cloves diced garlic

1/2 teaspoon salt

1/4 teaspoon red pepper

8 ounces crumbled goat cheese

Sprinkle of olive oil

Two big handfuls of arugula

Drizzle of balsamic glaze

Preheat the oven to 450 degrees

Grease a pizza pan with a very thin layer os Crisco

Spread the dough out onto the pan to fit out to the pan edges.

Set aside.

Heat a pan with one to two tablespoons olive oil

Add the onion and garlic.

Cook till soft

Add the mushrooms and cook till the liquid is absorbed

Add the salt, pepper and thyme.

Place this mixture on top of the pizza dough

Add the crumbled cheese

drizzle with olive oil

Bake on the bottom shelf for about 15 minutes or until the crust is brown

Take out of the oven and add the arugula and the balsamic glaze drizzle.

I wish I had made two because it disappeared.

Salmon Vegetable Packets

This is another recipe I found online.

I changed the recipe a little.

This is one of my favorite salmon recipes.

2 eight ounce sockeye salmon fillet

2 cups broccoli  florets

2 cups cauliflower florets

1 cup grape tomatoes

4 slices onion

16 green beans

6 brussel sprouts cut in half

8 slices of red pepper

2 tablespoons honey

2 tablespoons soy sauce

1/2 tablespoon sriracha

1/2 tablespoon rice vinegar

1/2 tablespoon olive oil

2 cloves minced garlic

1  inch of  fresh ginger, do not use the dried ginger

chives for garnish

Mix the honey, soy sauce, sriracha, vinegar, oil, ginger and garlic in a food processor

Preheat the oven to 375 degrees

Either make foil packages or use individual dishes

Evenly divide the vegetables into each dish or foil packet

Pour one tablespoon of dressing on the vegetables

Place the salmon on top and add the remaining dressing .

Fold up the packets or wrap the baking dish  with foil

Bake for 15 to 20 minutes

Top with chopped chives and lemon slice.

You can use any vegetables you like.

I love the packets of mixed vegetables. They make prep time so easy.

I also added carrots, spinach and peapods.

Now I’m getting fancy but I put pickled ginger on top.

The sauce is so good so don’t hesitate to make extra.

Serve with white rice.
