Chocolate Chip, Banana, Oatmeal Cookies

I ate four cookies and can’t eat supper.

I was testing the recipe.

They really fill you up.

Oatmeal will do that to anyone.

Four mashed bananas

Two cups of quick oats

3/4 cup of old fashioned oatmeal

1/3 cup unsweetened applesauce

3/4 cup shredded coconut

3/4 cup dark chocolate chips

Four tablespoons chunky peanut butter

One teaspoon vanilla

Mash the bananas in a mixer

Add the oats, applesauce,peanut butter, coconut, and vanilla

Mix ¬†together. Don’t overbeat

Add the chocolate chips

Preheat the oven to 350 degrees

Use a full teaspoon of batter and drop on a silpac

If you are not using a silpac or parchment paper I would recommend lightly greasing the pan.

These cookies do not spread so you can put them close together

Bake for 15 minutes

They will be moist in the center.

They taste just like hot oatmeal.

You can add raisens, nuts or any other fruit you like.

These are great when you are running out the door in the morning

Herring Salad

The first time I ate this I was at my mother-in-laws house.

This was my sister-in-laws special dish for the holiday.

I loved it.

So my sister in law gave me her recipe.

One 32 ounce jar of herring, drain, remove the onions and cut into bite-size pieces.

1 pint sour cream

3 tablespoons red wine vinegar

2 tablespoon white sugar

1/2 red onion cut into very thin slices

2  peeled, diced apples, macs are the best

One thin sliced carrot

Mix vinegar, sugar and sour cream together

Add the herring, onion, carrot and apples

Marinate overnight.

Serve with crackers.
