Leftover Brie

I had a small piece of brie leftover.

Here I go again,”waste not want not”.

Take one small potato roll

Put the cheese on top

Microwave for about 15 seconds till the cheese is hot

Spread a small amount of apricot jam on the roll

Add a thin slice or two of a pear.

This was a great treat for lunch.

Thai Turkey Zucchini Soup

I love the taste of Thai food but sometimes I don’t have all the ingredients I need to make a recipe.

Today was a good day and I had everything including great leftovers to add in.

1 tablespoon coconut oil

One chopped onion

1 1/2 teaspoon jalapeño relish or 1/2 diced jalapeno

2 tablespoon curry powder

One teaspoon turmeric

2 large cloves minced garlic

4 cups chicken broth

One tablespoon chicken bouillon

1  15 ounce can of full fat coconut milk

One thinly sliced red pepper

4 cups diced leftover turkey

2 tablespoons fish sauce

2 cups cooked rice

1/2 cup chopped cilantro

2 cups thinly sliced zucchini

Lime wedges

Heat the coconut oil in a pan

Add the onions and garlic

Sauté till the onions are soft

Add the jalapeño, curry powder and turmeric

Cook only a minute

Add the chicken broth, coconut milk, bouillon and  fish sauce.

Bring to a boil for two minutes

Turn the heat to medium and add the turkey.

Cook for another five minutes

Add the cooked rice, cilantro, red peppers and zucchini

Serve with a lime wedge, pork dumplings or egg rolls

 

Pretty Pumpkin Pie

Everyone likes that three or four bites of pumpkin pie.

This year I gave it to them.

I made my usual pumpkin pie and chilled it.

Got some pretty fall cupcake wrappers and placed them on a plate.

Take a cookie cutter the size of the paper wrapper and cut the pie with it.

I got ten round pies to put into the wrappers

Cover them and just before serving add the whipped cream

They looked so pretty.

Sally’s Lace Cookies

My sister-in-law gave me some of these cookies and I love them so I got the recipe from her and made two batches that disappeared.

One stick of  melted butter

One teaspoon vanilla

1 1/2 cups old fashion oatmeal

1 cup sugar

1 teaspoon baking powder

1 tablespoon flour

1 egg, slightly beaten

Mix the cooled melted butter, sugar, flour, oats and baking powder.

Add the egg and vanilla and beat well

Drop one teaspoon on a non stick silpad, parchment paper or non stick foil. Bake 350 degrees for ten minutes.

These cookies spread alot so leave plenty of room

Let them rest ten minutes and then peel off.

You can roll them or leave then flat.

I served them with a caramel sauce. Chocolate wouldn’t be bad either.

Be careful these cookies burn in a minute but the dark brown ones are still great.

Kale and Arugula Salad

Daphne Oz made a this salad on The Chew and I just tweaked it to my taste.

3 to four handfuls of baby kale.

Only use baby kale  because the regular kale is too tough.

2 handfuls of baby arugula

2 diced scallions

One diced apple . I kept the skin on.

1/2 a pomegranate

2 tablespoons crumbled goat cheese

2 handfuls cornbread croutons

Dressing

2 inches of fresh peeled ginger.

Only use the fresh

2 cloves garlic

One teaspoon salt

4 tablespoons apple cider vinegar

3 tablespoons maple syrup

1/2 teaspoon corse black pepper

1/2 cup olive, grapeseed or canola oil

Put the garlic, ginger and salt in the magic bullet and blend till you have a paste

Add everything else and blend well

Add half the dressing and save the rest for your next salad.

This is a very easy salad to put together.
