Toasted Chickpea Salad

This is a take off from MYRecipes.Their recipes are so good but I have a tendency to change everything.

This is my version.

2 cans of drained and rinsed chick peas

2 tablespoons olive oil

2 teaspoons ground cumin

1 teaspoon ground coriander

1/2 teaspoon ground turmeric

1/4 teaspoon salt

1/4 teaspoon ground black pepper

1/4 teaspoon garlic powder

1/3 cup olive oil

2 teaspoons grated orange rind

3 tablespoons wine vinegar

3 tablespoons orange juice

1/2 teaspoons salt

1/2 teaspoon black pepper

1/2 cup diced red onion, Cut these the size of the chic peas

8 diced dried apricots mixed with one tablespoon honey

4 big handfuls of baby arugula

1/2 cup feta, blue or goat cheese.

I always use a little more cheese because I LOVE it.

Orange Slices

Olives

Mix the drained chic peas with the two tablespoons oil, cumin, turmeric, coriander, salt , pepper and garlic powder.

Roast at 450 degrees for twenty minutes.

Combine orange juice, orange rind, vinegar, oil, salt and pepper.

Mix the warm, roasted chickpeas with the onions

Add the orange dressing

Mix in the arugula and apricots

Top with the cheese

Garnish with orange slices and olives

I love this warm but it was pretty good at room temperature

I also made this with lemon juice and rind instead of the orange, but you have to add one teaspoon of honey to the juice.

Feel free to add some sunflower seeds, pumpkin seeds, walnuts or almonds.

The original recipe called for fresh apricots but they were too expensive.

 

 

 

 

Rice Balls

Stop what you are doing and make these rice balls.

I love them.

This is not my recipe but it is a modification of the Food Network recipe from Alexandra and Elliot Angle.

I hope they think my recipe is just as good as theirs.

1 cup short or medium grain rice

1 pound ground chicken , pork or shrimp

1 egg

1 inch of fresh grated ginger

3/4 cup chopped onion. Cooked with one tablespoon of butter till soft

2 teaspoons salt

1 tablespoon soy sauce

1/4 chopped cilantro

Cabbage or lettuce leaves for the bottom of the steamer

Soak the rice for 2 hours and then drain well

Spread onto a flat pan and set aside

Mix the chicken , egg, onion, ginger, salt, soy sauce and cilantro.

Form into one inch balls

Roll in the rice to coat the ball all around.

Place on waxed paper and chill for a couple of hours

Do not let the balls touch

Line your steamer basket with the cabbage leaves.

Place the balls on the leaves and don’t let them touch.

Bring the water to a boil and then place the steamer on top

Place the cover on and steam for 30 minutes

They are so pretty.

Serve with sweet chili sauce, carrot ginger dressing or whatever you like.

My family loves these.

Serve with chicken wings, ribs, steak or shrimp and a vegetable stir fry and you have a great meal.

Lemon Chicken with Pasta and Broccoli

The secret behind this recipe is to marinate the chicken and this is all you need to flavor the pasta

Marinade:

One big lemon including all the zest and all the juice

1/3 cup canola oil

1/3 cup white wine

Ten cloves minced garlic

1 1/2 teaspoon dried oregano

1 teaspoon dried thyme

3/4 teaspoon salt

6 boneless chicken breasts or 8 large boneless chicken thighs

You can mix the thighs and breasts together if you like

You can also cut the chicken into smaller pieces

Mix up the marinade in a plastic bag and then put the chicken inside and seal the bag.

Put the bag in a bowl in case it leaks in the refrigerator.

Let marinate over night or  eight hours.

Heat another 3 tablespoons of oil in a oven proof skillet

On medium high heat

Place the chicken in the oil and sear on each side

Try to get as much marinade off the chicken so it will not splatter as much.

Place the seared chicken on a plate till all the pieces are done.

The chicken should not be cooked through.

You just want a nice  brown crust.

Boil the marinade for five minutes in the same pan as the chicken after you remove the last batch.

Put all the chicken in the oven proof pan and pour the marinade on top

Bake in a preheated oven at 400 degrees for 20 to 30 minutes.

In the meantime , boil up your favorite pasta in salted water

I made one pound  of pasta

About five minutes before the pasta is finished cooking add  about 6 cups of broccoli or one big head of broccoli to the pasta

This should only take 3 minutes

Try not to overcook either the pasta or broccoli

Drain everything in the colander but save one cup of pasta water.

Drizzle the pasta and broccoli with about two tablespoons of olive oil

Take the chicken out of the oven and make sure it is cooked then pour everything on top of the pasta

If the pasta looks dry add the pasta water.

Try to make it look pretty but does it matter?

Add some lemon slices and a lot of freshly grated parmesan cheese.

One of my favorite meals.

 

 

 

 

 

Hot Dog

Okay I caved.

Since I ate healthy yesterday and mentioned a hot dog I had to have one today.

Boiled or steamed hot dogs are my favorite

Grilled is so good too but a good boiled hot dog can’t be beat.

Put one hot dog in a pot of water and bring to a boil for about five minutes

Heat up 1/2 cup sauerkraut till it is hot

Take a mushy hot dog roll and put some deli mustard on the bottom followed with the hot dog, sauerkraut and more mustard.

Take two napkins and enjoy

I grew up in New York and I never sat down and ate a hot dog because the street carts had the best DOGS.

 

Breakfast Udon Noodles

It was one of those cold winter mornings when all I wanted was something warm.

Since I have become my Mom, I love soup.

I have become a fan of the packaged Udon noodles that you can buy in the produce department of any grocery store.

One package of udon noodles

3 cups chicken stock

Three baby bok choy cut into one inch pieces

One diced scallion

One 1/2 inch slice of ginger

One cup cooked chopped broccoli

Shredded carrots are optional

One fried egg

Boil the broth with the ginger

Add the noodles

Cook till they are warm and soft

Add the bok choy, broccoli and scallions

Cook till everything is nice and warm

Put the noodles in a bowl with the vegetables

Add enough broth to come half  way up the noodles

Top with the egg

Add hot sauce

Pour yourself a cup of leftover broth instead of tea

I love this and put any leftover vegetables into it.

Winter Grilled Burger

Nothing is better than a grilled burger in the winter.

I think it is so good because I am so cold when I come back into the house.

One great potato bun

Lettuce and spinach

Ketchup

Grilled red onion

One grilled hamburger

One slice of cheese

Put everything together

Add a pickle and enjoy

Make two just in case you want to overindulge.

Coconut Shortbread Cookies

This is such an easy recipe but it only makes about 25 cookies and they disappear fast.

Preheat the oven to 375 degrees.

Put a silpat on your baking sheet.

2 cups  all purpose sifted flour

1/2 teaspoon baking powder

1/4 teaspoon salt

1 cup unsalted soft butter

3/4 cup superfine sugar

1 large egg

1 teaspoon coconut extract

Icing

One cup  sifted powdered sugar

One tablespoon coconut flavored coffee creamer to start then add one teaspoon at a time to make a creamy frosting

Cream the butter till it is creamy and pale yellow

Add the sugar and mix till fluffy

Add the egg and coconut extract and mix well

Add the flour, salt and baking powder 1/4 cup at a time

Mix well

Take a teaspoon full of batter and roll into a ball.

I made mine smaller than a golf ball.

Take a glass and press the dough flat to about a 1/4 inch thickness.

You should have these pretty looking discs.

Bake for only 8 minutes.

Keep them on the baking pan for about ten minutes after they come out of the oven.

They should be pretty cool and then frost them with the icing.

Make the icing just before you are going to frost the cookies or else it will start to get hard.

Let the frosting dry well before layering the cookies.

Store in an airtight container in a cool place.

They freeze well.
