Vietnamese Pulled Pork Sandwich

unnamed (39)I love these little sandwiches at a good Vietnamese restaurant.

I had to figure out the recipe and after a lot of trials finally success.

It is a very easy sandwich but I wanted that exact taste.

One  4 to 5 inch piece of crusty Italian bread

One tablespoon mayonnaise mixed with 1/2 teaspoon siraccha sauce.

2 tablespoons fresh cilantro

1/2 cup arugula

3/4  cup  warm pulled pork

2 to 3 tablespoons pickled vegetables

Start assembling the sandwich

Heat the bread because warm bread is always so much better

Slather the mayo mix on one side

Add the cilantro, arugula, meat and pickled vegetables

Place the other slice of bread on top and try not to eat too fast.

You can make these with chicken, shrimp or beef.

I made the pulled pork with salt, pepper and garlic powder because I like it plain. I put the sauces on the side.

Fast Tomato Mozzarella Salad

My son brought me some delicious fresh Mozzarella cheese from the North End in Boston.

Fresh cheese is so much better than the rubbery supermarket version.

I had to eat it right away because it is so delicious.

1  pound fresh mozzarella cheese cut into cubes

One container of grape tomatoes

8 fresh basil leaves 1/2 teaspoon oregano

1/2 teaspoon salt

1/4 teaspoon garlic powder

1/4 teaspoon red pepper flakes

5 tablespoons good olive oil

1/2 cup chopped vidalia onion

Mix everything together

Get a good loaf of Italian bread and enjoy

By the way, my son also brought me bread.

Sauerkraut Pancakes

Don”t say yuck.

My daughter just came back from Budapest and said she had these pancakes and they are delicious.

I had to try them.

You have to love sauerkraut to really enjoy these pancakes.

1 1/2 cup drained and squeezed sauerkraut.

1/4 cup chopped fresh chives or two diced scallions

1 cup leftover mashed potatoes

1 egg

2 tablespoons flour

1/2 teaspoon black pepper

Mix everything together

Make a ball the size smaller than a baseball then flatter out to about 3/4 inch thick.

Heat about 1/2 cup canola oil to medium high

Place the pancakes into the pan and fry till both sides are golden brown.

Wait till one side is brown and try not to touch them until it is time to turn them over and brown the other side

Drain on a paper towel

Serve with yogurt dill dip , sour cream, bacon bits and apple sauce.

If you want to keep it low carb eliminate the potato but you do need the flour to help bind the sauerkraut.

I was a little skeptical but really liked them.

Something different and everything tastes good fried.

Next time I am going to try baking them at a high heat to cut some calories.


Tres Leches Cake

My daughter needed a cake to bring to a school dinner.

She asked me to make this.

I will kvell forever because she is graduating from medical school.

I got carried away putting the fruit on the top but you arrange the fruit any way you want.

One 9 by 13 baking pan

One Duncan Hines yellow cake mix

One can of sweetened condensed milk (14 ounces)

One can of evaporated milk (12 ounces)

One cup whole milk

One pint whipping cream

2 tablespoons powdered sugar or a little more but don’t make the cream too sweet because the cake is sweet.

One teaspoon vanilla

2 pounds blueberries

One large box of strawberries

Make the cake according to the box directions

Take the cake out of the oven

While the cake is still warm poke holes in the cake with the back of a wooden spoon.

Do not poke all the way to the bottom of the cake

Mix the condensed milk, evaporated milk and whole milk together.

Pour slowly into the holes of the cake and keep on pouring till all the liquid is finished.

Its fine if it spills onto the entire cake because the milk is going to get absorbed into the cake.

Let the cake cool, cover it and refrigerate  for a couple of hours.

Whip the cream, vanilla and powdered sugar till soft peaks form.

Take all the whipped cream and put it on top of the cake.

Smooth out

Add the fruit

You can use whatever fruit you like but make sure it is washed and dried well.

I love raspberries and blackberries.

Cover again and keep refrigerated.

Cut into 2 by 2 pieces because it is very rich.

My children love it.



High Protein Salad

Easy and one of my favorites.

Three handfuls baby arrugula about 4 cups

One small thin sliced cucumber

1/4 sliced vidalia onion

1 cup cottage cheese

One piece of cooked salmon the size of the palm of your hand.

2 to 3 tablespoons french dressing

Layer everything and pour the salad dressing on top.

I posted this before but added the salmon this time. It was very good.

Fish Broccoli Soup

IMG_0646I’m trying so hard to eat clean and this is another success.

Two tablespoons olive oil

One large chopped onion or two medium.

Four cloves chopped garlic

Two stalks chopped celery

32 ounces low sodium chicken broth

1 1/2 tablespoons powdered chicken  soup

1 1/2 pounds to 2 pounds haddock cut into bite size cubes the size of a quarter.

2 medium potatoes sliced very thin

1/2 teaspoon tumeric

2 cups frozen broccoli flowerets

1/2 cup chopped fresh parsley only use fresh

1/2 teaspoon black pepper

Heat the oil in a soup pan.

Add the onion, garlic and celery. Cook on medium till soft.

Add the chicken broth, powdered soup and potatoes.

Cook till the potatoes are cooked about ten minutes..

Add the tumeric

Add the cubed fish and turn the heat to low and poach the fish about 15 minutes.

Add the broccoli till it is cooked and bright green about six minutes.

Stir in the fresh parsley and  black pepper.

Do not cook the parsley. It tastes so good fresh.

I served this with garlic croutons.

OMG this is good.



Vidalia Onions and Eggs

It is Spring and I am going to turn into a Vidalia onion.

I LOVE them and this is their season.

Slice up half a vidalia onion and sauté them in butter

Add a little salt and stir together.

Crack two eggs and cook the way you like them.

I put everything on a soft piece of potato bread.

It was wonderful.
