Lobster, Corn and Potato Chowder

Two lobsters

Four cups of water

Two quarts milk

Two teaspoons lobster seasoning

Four tablespoons butter

One diced onion

Three diced shallots

Two stalks of diced celery

Two cups of frozen corn

One box of scalloped potatoes seasoned with sour cream and chives

Bring the water to a boil

Put the lobsters in the water and cook for about ten minutes with the cover on the pot.

Strain the lobsters  into a bowl

Melt the butter in the same pot

Put the onions, shallots and celery in the pot and cook till soft.

Put the water back into the pot and reduce to one cup.

Add the seasoning and bring to a simmer

Add the milk and bring to a very slow boil

Take off all the lobster legs and put them into the milk.

Let the legs cook in the milk

Lower the heat to medium

Add two cups of corn and the package of scalloped potatoes with the seasoning package.

Cook on medium heat for about twenty minutes or until the potatoes are cooked.

Add the rest of the cooked cut up lobster meat.

I added all the red and green from the inside of the lobster and whatever juices came out.

Let everything simmer together for at least ten minutes.

Add fresh ground black pepper to taste.

Serve in a big bowl and a lot of napkins because the lobster legs are so good to suck on.




Chocolate Waffles, Strawberries and Strawberry Sauce

These are the easiest waffles you will ever make.

One Duncan Hines chocolate cake mix

Follow the directions on the back of the box.

Put the desired amount of batter in your waffle maker.

Cook till done.

Serve with great big strawberries and strawberry syrup.

My grandchildren loved them.

I did dust the leftover waffles with a combination of two tablespoons cocoa powder and four tablespoons confectionary sugar.

The kids were eating them like cookies.

Pulled Pork, Cheese and Egg Wrap

One small wrap

One fried egg

One slice of cheese

1/2 cup cooked pulled pork

One teaspoon sour cream

One teaspoon cilantro, mango salsa

A couple of splashes of hot sauce

Just layer everything on the wrap

Garnish with diced scallions

Fold in half and eat over a plate because it will leak.

What a way to start the day.


Pizza Salad

This is the time of the year that I feel guilty eating anything.

So.. when I had a craving for pizza I had to justify eating it.

Make one or buy one cheese pizza.

Mix a couple of handfuls of arugula with diced scallions and cucumbers.

Mix with a couple of tablespoons of lemon dressing.

Don’t over dress the salad because it gets too wet.

Put the salad on top of the pizza.

It is so good.

I also made a bbq chicken pizza and topped it with caesar salad.

That is my favorite.

All my guilt was gobbled up.

Hamburg and Rice

This is what I eat when my stomach is upset but I love it.

One cup of white rice

2 cups of water

1/2 teaspoon salt

1/2 tablespoon butter

1/2 pound of 90% lean hamburger

Boil the water

Add the salt, butter and rice

Cover and cook on low for about ten minutes or until the rice is done

Set aside.

Brown and crumble the hamburg

Salt to your taste

Add the rice and mix together.

This is a very old cure that I remember my Mom making for me.

I don’t know if it works but it is good.

Shortbread Squares

This is another shortbread recipe that I love because it is two bites and I don’t have to melt chocolate.

1 cup unsalted butter

2/3 cup sifted powdered sugar

1/2 teaspoon real vanilla extract

1/2 cup sifted corn starch

1 1/2 cups sifted flour

One cup chocolate chips or more

Beat the butter till fluffy

Add the sugar and beat till smooth

Add the flour, vanilla and corn starch

Beat until a nice dough forms

Roll out in between two pieces of plastic wrap about 1/4 inch thick

Try to roll it out to a square or rectangle

Place in the refrigerator until the dough is firm.

Preheat the oven to 325 degrees

Line the cookie sheet with a silpac

Remove the dough from the refrigerator

Cut the dough into one inch by one inch squares

Place them on the pan

Decorate each with the chocolate chips.

I used four chips but made some with one chip and both looked great.

Bake until the cookies are light brown on the bottom about 15 to 18 minutes

Do not stack the cookies until the chips are hard again

Great pick up cookie.

If you have any leftovers, keep in a air tight jar or freezer

I tried the new vanilla chips, not the white chocolate, and they are good but they do discolor when they are baked.

The dark chocolate chips are my favorite



Fried Apples

Go in your fruit draw and take all your touched and spotted apples out.

Wash them

This is for about five apples

Slice and core them

I like the skin left on but feel free to peel the apples

Melt one tablespoon of butter

Add the apples

Stir fry for two minutes

Add one tablespoon of brown sugar

One teaspoon lemon juice

1/2 teaspoon ground cinnamon

Stir fry till the apples are almost soft.

You can add raisins if you like

Top off with whipped cream

You can also make this with pears
