Butternut Squash Curry

butternut squash curry

This started out as a soup but was too thick so I put it over rice.

I always try not to waste my mistakes and this turned out pretty good. Not what I expected but still pretty good.

4 cups chopped butternut squash

2 chopped carrots

One small chopped apple

32 ounces  of chicken broth

2 tablespoons butter

One chopped onion

4 minced garlic cloves

4 to 6 ounces sliced mushroom

1/2 teaspoons ground cumin

1/2 teaspoon coriander

1/2 teaspoon cinnamon

3/4 teaspoon ground ginger

1/4 teaspoon dry mustard

3/4 teaspoon salt

1/2 teaspoon cayenne pepper

One tablespoon brown sugar

One tablespoon fresh lemon juice

Cook the squash, apple and carrots in the chicken broth till soft.

Cool and then puree till smooth.

Melt the butter and saute the onion, mushrooms and garlic till soft.

Add the spices and cook till fragrant about two minutes.

Add the squash and carrot puree with all the liquid.

Blend everything together and cook till heated.

Serve over rice.

Ginger Vegetable soup

Ginger Vegetable Soup

My friend Myra told me about this soup and I thought it sounded weird. OMG it is delicious. It almost has an Indian flavor without the curry. The ginger is a great flavor and everything else blends together.

2 Tablespoons olive oil

One pound of boneless chicken, pork, shrimp or lean beef

1 teaspoon salt

1/2 teaspoon cayenne pepper

3 cloves minced garlic

1 rounded tablespoon minced fresh ginger  Only use fresh.

1 large diced onion

1 teaspoon cumin

1/2 teaspoon dry mustard

1/2 teaspoon dry coriander

1/4 teaspoon cinnamon

1 tablespoon brown sugar

4 cups chicken broth

1 can (14.5 ounces) diced tomatoes

2 diced carrots

1 can drained diced potatoes

1 diced sweet potato

1 cup red lentils

12 ounces baby spinach

Sour cream

Yogurt

Chopped cilantro

Heat the oil in a soup pan.

Add the diced meat, salt and pepper.

Cook five to ten minutes until the meat is cooked.
Add the onions, garlic and ginger and cook another five minutes.
Add the carrots, celery, white potatoes and sweet potatoes.
Cook for 5 minutes.

Add all the spices including the sugar. Cook for 3 minutes.
Add the broth and tomatoes

Bring to a boil.

Add the lentils.

Cook till the vegetables are soft.

Add the spinach and cook till it is wilted.

Garnish with the sour cream or yogurt and the cilantro.

Use diced tomatoes with green chili if your like a spicy kick. I did and it was great.

The original recipe called for chicken but I used leftover pork and next time I will try making it without meat.

Eliminate the meat and use vegetable broth for a true vegetarian soup.

Fire Cider Salad Dressing

Fire Cider Salad Dressing

I had a terrible cold and my friend Tammy said to try fire cider.

I didn’t know what it was so I looked it up on the computer.

It is a combination of spices and cider vinegar.

You are supposed to sip it or rub it on your body to get rid of a cold, aches and pains or whatever else ails you.

I made up a batch, liked it and so this is the beginning of  a salad dressing.

I tested it out on my family and they loved it.

Now it is a keeper.

3/4 cup of apple cider vinegar

One cup of olive oil

3 cloves of garlic

1/2 teaspoon salt

1/2 teaspoon cayenne pepper

2 tablespoons grated fresh ginger

2 tablespoons grated fresh horseradish

1/4 teaspoon onion powder

One tablespoon brown sugar

One teaspoon honey

Mix the salt and garlic in the magic bullet till it is pureed.

Put everything else in the jar and blend till it is smooth.

Serve with a green salad of arugula, romaine lettuce, cucumbers, red peppers and vidalla onions. Also makes a great dressing for cole slaw.

Just a different dressing that  can cure whatever.

Maybe I should call it the old wives tale dressing.

 

Fish Tacos

Fish Tacos

Fish tacos cost a fortune in the restaurant but only pennies at home.

Maybe quarters?

Two pounds of a boneless, skinless, white flaky fish.

I love cod, sole, haddock or tilapea but you can use anything including shrimp or scallops.

Tacos can even be made with fried fish and they are very  very good.

I am trying to be a little healthy so my fish will be baked.

One teaspoon adobe seasoning

One teaspoon ground cumin

One teaspoon of paprika

One teaspoon  garlic powder

One teaspoon onion powder

One teaspoon cayenne pepper

Two tablespoon butter or oil

Season the fish with all these spices and set aside for 15 minutes.

One sliced  raw vidalla onion. Soft stir fried onion is also great.

One cup chopped cilantro

One cup chopped red pepper

One large chopped tomato

Two chopped avocados with lime juice on top

Sour cream

Salsa

Chopped lettuce

Hot sauce

Diced jalapeno peppers

Sliced pickled peppers

Grated cheddar cheese

8 to 10 soft tortilla wraps

Heat the oven to 400 degrees

Bake the fish till it is cooked about 15 minutes. Test it by seeing if the fish flakes.

Heat the tortillas wrap in the microwave in a damp paper towel for 20 seconds.

Place on a plate and start layering .

Start with the sour cream on the bottom

Add the cheese and fish then all the other toppings you like.

Fold the tortilla in half and get as many napkins as you can.

These are messy but delicious.

My kids make a salad by putting a bed of lettuce  on the plate and adding everything on top.

I also serve this with nachos and quesco dip.

Spicy cole slaw is also a great side.
