Korean BBQ Chicken

Stop what you are doing and make this now.

I must have too much time on my hands because I can’t stop reading Pinterest.

This recipe looked interesting and I have made it a couple of different ways and it is delicious.

It is so important to marinate the meat.

I am going to give you my changes in this recipe.

1/4  grated pear or apple

1 to 2 grated cloves garlic

2 tablespoons soy sauce

One teaspoon red pepper flakes

One tablespoon grated peeled fresh ginger

2 level teaspoons brown sugar

One tablespoon toasted sesame oil

One pound boneless chicken tenders. Cut each tender into four long pieces

Mix everything together and marinate for at least eight hours.

I just do this the night before I cook it and keep it in the refrigerator.

Put two tablespoons of oil in a frying pan and heat to moderate high heat.

Place the chicken in the pan in a single layer.

Nothing should touch.

Let the chicken get a nice char on one side so don’t touch it until it is done.

Turn and cook the other side.

These pieces of chicken are small so they cook fast.

Serve with diced scallions and rice.

Peapods, baby corn or  stir fry vegetables would be great

This chicken can also be skewered and cooked on the grill.

My grandchildren are going to go wild, they love anything on a stick.

Garlic Sauce

This is the brown sauce thats on your Chinese chicken.

When I was young there was a restaurant that put this over white rice and I loved it.

1/2 cup low sodium soy sauce

1 cup  beef broth

1/3 cup white or rice wine

3 tablespoons white sugar

1 tablespoon sesame oil

1/4 teaspoon black pepper

1/4  cup beef broth mixed with 2 tablespoons cornstarch

2 tablespoons peanut oil

2 tablespoons minced garlic

1 tablespoon minced ginger

Mix the soy sauce, one cup beef broth, sugar , pepper and sesame oil together. Set aside.

Heat the peanut oil

Add the garlic and ginger and stir fry for one minute.

Add the soy mixture

Bring to a boil

Simmer and stir for about 3 minutes

Add the cornstarch mixture and bring back to a boil stirring so it doesn’t stick.

Simmer for a couple of minutes until the mixture thickens.

I put about 8 tablespoons over four, sliced and stir fried chicken tenders.

Steamed broccoli on the side.

 

Steak Tip and Blue Cheese Salad

I could eat this every night but I won’t.

Three big handfuls of a good organic spring mix.

1/2 sliced seedless cucumber

Four thin slices of red onion

1/3 cup balsamic dressing. Home made of corse.

1 pound of strip steak cut into one inch pieces

1/2 teaspoon Adobe seasoning

1/8 teaspoon garlic powder

1/4 teaspoon fresh grind black pepper

1/4 teaspoon salt

2 Tablespoons butter

One tablespoon olive oil

One medium onion, cut into four pieces and then separated.

1/3 to 1/2 cup crumbled blue cheese

Fresh chopped parsley for garnish

Sliced crusty French bread

Mix the spring mix, cucumber and onion together

Sprinkle the Adobe seasoning, garlic powder, salt, pepper and onion together

Heat a frying pan

Add the oil and one tablespoon butter and melt on high heat.

Add the meat and onion to the pan

Don’t touch it

If your pan is hot enough this should take only a couple of minutes.

Turn the meat over when you see a crust form  on the bottom

Cook for another minute  till medium rare.

Take off the heat and add the other tablespoon of butter to glaze the meat

Toss the salad with the dressing

Put several thin slices of bread on top of the salad

Pour the steak over the bread

Sprinkle with the blue cheese

Garnish with the parsley

 

 

 

 

 

 

 

 

 

Tenderloin, Onions, and Croutons

I had to trim the tenderloin for Christmas.

All the scrapes went into a bag for the dog.

“WOOF, WOOF”

After everyone left I carefully cut up some of the meat for the dog but the rest I managed to salvage to make a decent size stir fry.

One large sliced onion

One tablespoon butter

About three cups of small cubed meat

One to two handfuls of croutons

Melt the butter

Add the sliced onion

Cook till it is slightly charred

Add the meat and cook till medium rare

Season with salt and pepper

Add the croutons to absorb all the juices

This should be enough for two but I finished it .

My dog did enjoy her portion.

 

Tuna and Steak Platter

I  just put together a help yourself dish.

It is one plate serving.

6 hard boiled sliced eggs

10 slices of crisp cooked bacon

One bag of small potatoes that you roast in the oven with salt, pepper and oil.

One bag of steamed broccoli

Three tuna fillets just quickly seared.

Three boneless rib eye steaks. Grill them to rare. Remove any excess fat and slice the steaks into 1/4 inch thickness.

Two large sliced onions.

Two tablespoons butter

Slice the onions and stir fry in the butter untill still crunchy.

Add the steak and stir fry for a minute just to get it warm.

Season with salt and pepper

One big wedge of good blue cheese

Slices of Italian bread and a good tomato salad are a must.

Serve with a Chimichurri sauce.

Grilled Pork Salad

I made a pork loin on the grill and it was great but the leftover salad was better.

One boneless pork loin seasoned with just a little low sodium asian sauce

Sear the pork on medium high heat.

Take off the grill and place in an oven pan

Coat the top of the loin with several teaspoons of duck sauce.

Finish in the oven at 375 degrees till the sauce has melted and is sightly brown.

The pork should also be done to a medium well.

Let stand out of the oven for at least ten minutes before slicing..Now enjoy the pork with pilaf, broccoli and salad.

The next days make this salad.

Just layer different vegetables in a salad.

One small head of Romaine lettuce cut into bite size pieces.

One sliced yellow pepper

Six cut string beans. I used them raw but you can blanch them for a minute in hot water.

Four thin slices of a Vidalia onion

Two big handfuls of baby spinach

12 grape tomatoes

Four to six cups of sliced pork  because you have to taste when you cook so extra is good.

One tablespoon oil

One sliced garlic clove

One large sliced onion

1/2 cup honey Dijon vinegar salad dressing

Layer all the salad except the spinach.

Dress with the salad dressing

Add the spinach on top of the salad

Heat a skillet with the oil

Add the garlic and cook till soft

Add the sliced onion and cook till it is still crunchy

Add the meat and cook till it is hot

Season with hot pepper now if you like it spicy.

Pour the hot pork over the spinach in the salad so it wilts just a little

Chinese fried noodles can be added.

This is one of my go to leftover meals.

 

Pork Tenderloin To Go

My son was taking the train to see me.

I had to pick him up at 7:30 p.m. so I knew he would be starving.

So I made supper like normal and packed his up and he had a car snack.

Two pork tenderloins, seasoned with salt, pepper and garlic powder.

Roast till it was medium well.

Two large sweet potatoes, baked, mashed and seasoned with a little butter, salt and pepper.

One spaghetti squash, streamed in the oven then shredded. Mix with three cloves cooked garlic in 2 tablespoons butter. Mix everything together and season with salt and pepper.

Six apples, cored and sliced. Fried in 2 tablespoon butter. Season with 1/2 teaspoon cinnamon and 1 tablespoon brown sugar.

Just take the amount you want of everything and place in a takeout container.

This meal was easier then driving to a take out place. Not really..but

He did enjoy a home cooked meal.
