My sister was at my house and I started to make hamburgers.

In ten minutes I had finished making ten pounds of ground beef into hamburger patties.

She was amazed that it took so little time.

Well I have been making patties for years and for a family of eight so I had to figure out how to do things quickly.

Take your five pound package of 90% ground beef and cut it into 15 pieces. Each patty will be 1/3 of a pound.

Put each piece of meat into a zip lock sandwich bag.

Wash your hands.

You don’t have to touch the meat again because you form the meat threw the bag.

Flatten the meat in the baggie and make into a round patty.

Take all the air out of the bag and seal it closed.

Put an indentation in the middle of each patty so the meat will cook evenly.

Thats it.

They stack in the freezer so well and all this for ten minutes work.

I season them with salt and pepper before I cook them.


Porkchop Sandwich

I am trying not to eat processed food except for my addiction for hot dogs.

So this afternoon I decided to cook the lone pork chop that kept falling out of my freezer.

One  bone in pork chop

1/2 half sliced onion

2 tablespoons oil

One roll

Two tablespoons tzatziki sauce

3 sweet pickles

One tablespoon Sriracha sauce

Put the oil in a non stick frying pan

Add the oil and heat till warm

Add the onion

Season the pork with salt and pepper

Push the onions to the side and place the pork in the middle

Cook till the blood comes to the top of the chop and then turn over

Cook for another three to five minutes till done

Let it sit off the heat for ten minutes

Take the roll and slice it in half

Put the tsatziki sauce on one side of the bread and the onions on the other side

Cut the meat off the bone and place on the bread

The pickles are on the side with the hot sauce.

Eating  the meat off the bone is the best.

I wish another pork chop would fall out of my freezer

Hot Dog

Okay I caved.

Since I ate healthy yesterday and mentioned a hot dog I had to have one today.

Boiled or steamed hot dogs are my favorite

Grilled is so good too but a good boiled hot dog can’t be beat.

Put one hot dog in a pot of water and bring to a boil for about five minutes

Heat up 1/2 cup sauerkraut till it is hot

Take a mushy hot dog roll and put some deli mustard on the bottom followed with the hot dog, sauerkraut and more mustard.

Take two napkins and enjoy

I grew up in New York and I never sat down and ate a hot dog because the street carts had the best DOGS.


Winter Grilled Burger

Nothing is better than a grilled burger in the winter.

I think it is so good because I am so cold when I come back into the house.

One great potato bun

Lettuce and spinach


Grilled red onion

One grilled hamburger

One slice of cheese

Put everything together

Add a pickle and enjoy

Make two just in case you want to overindulge.

Royal Grilled Pork Salad

My sons, my sons, my wonderful sons.

Again I was treated like a queen.

I went to my son Andrews house and he had supper all ready for me.

He marinated a boneless pork loin.

Grilled it to medium.

Let it sit and then sliced it.

He put the hot meat over a cold salad that was dressed with lemon garlic dressing.

He also added feta cheese.

Just to spice it up Andrew put some hot sauce on his salad.

Mine was plain.

OMG it was so delicious.

Andrew used a marinade of garlic, oregano, salt, pepper, lemon juice, mint and rosemary.

You can use whatever marinade you like and whatever dressing is your favorite

I am still flying high from being pampered

Mongolian beef #1

My husband loved Mongolian beef and I always search for a better recipe.

I found another one.

3 pounds of steak tips cut into 1/2 inch trimmed pieces.

8 tablespoons low sodium soy sauce

4 tablespoons honey

2 tablespoon garlic chili sauce

4 tablespoons sesame sauce plus one tablespoon for the marinade

2 tablespoons minced garlic

One tablespoon grated ginger

Two big sliced onions

Dipping Sauce

1/2 cup mayonnaise

Juice of 1/2 lime

3 to 4 teaspoons Sriracha

Put the soy sauce, garlic, ginger, honey, chili paste and One tablespoon sesame oil in a plastic bag

Mix well

Add the cut up meat

Seal the bag and marinate for four to 24 hours.

Make sure you seal the bag well because your refrigerator is going to smell great.

This is one of these recipes that you have to cook in batches because the meat has to be in a single layer to get that great crust on the bottom

Add one to two tablespoons sesame oil in a very hot skillet

Add as much meat as you could in a single layer to cover the bottom of the pan.

Let it cook on medium high and don’t touch it.

When you see the bottom of the meat with a nice brown crust turn it over for a minute to cook the other side.

Put into a plate and cook the rest of the meat

Put in the same plate with the other meat.

Keep warm

Place the onions in the same pan and charr on high heat just until you see the onions brown

Do not overcook them because you want the onions crunchy.

Place in a platter and put the meat on top of the onions

Serve with steamed pot stickers. steamed broccoli and white rice

This is so good I almost didn’t have enough so make extra.

This is also a great leftover in a soft tortilla or on top of a salad


Winning BBQ Wings

Easy and Fast

Four pounds of wings fit perfectly in one baking sheet

1/2 teaspoon Garlic powder

1/2 teaspoon Salt

1/2 teaspoon Pepper

Sweet Baby Rays Original BBQ Sauce

Preheat the oven to 425 degrees

Line the baking dish with non stick aluminum foil

Place the wings on the pan

Season with garlic powder, salt and pepper

Just sprinkle it and mix the wings around but keep in a single layer

Bake for at least 30 minutes or until the wings are crispy brown

Take out of the oven and drizzle the bbq sauce over everything

I use about 1/3 to 1/2 of a bottle

The Sweet Baby Rays has a squirt top so it is easy to get the sauce on each wing.

Put back in the oven and watch the sauce melt and get gooey

I love the frozen wings because they are trimmed and don’t have that last section of the wing that I only use for soup.

Make alot because they disappear

In the summer I grill the wings and they put them in the oven to finish with the sauce…..Fabulous.
