Tenderloin Wrap

I started trimming my own beef tenderloin several years ago.

You may ask, “Why is she doing that”?

If you didn’t ask, I’ll tell you anyway.

The beautiful trimmed tenderloin was $14.99 a pound and the untrimmed tenderloin was on sale for $6.99 a pound.

It takes about thirty minutes to trim the roast.

There is one skinny piece of meat that I take off and set aside.

This is what I use to make these sandwiches.

Season the meat with salt and pepper and grill or pan fry just till it is medium rare.

Place it on a pita bread with some hummus, greek yogurt sauce and scallions.

I usually get two nice sandwiches from the thin piece of meat.

The scrapes from the tenderloin I cut up into small pieces and cook them for my dog.

What can be better?

I have a gorgeous roast for $6.99 a pound.

I had a delicious sandwich and the most important thing…

My dog is happy

Cauliflower Grilled Cheese

I saw a version of this on the Chew and it looked delicious but was too much work.

One large head of cauliflower

One egg

1/2 cup milk

1/4 teaspoon garlic powder

1/4 teaspoon salt

1/2 cup flour

1/2 teaspoon salt

1/2 teaspoon black pepper

One thin sliced onion

Ten slices American cheese

Ten slices Hoffman cheddar cheese

Two tablespoon butter

Slice the cauliflower into 1/2 inch slices

I removed the bottom stem but keep most of the core so the cauliflower would keep its shape.

I got 6 slices to make three sandwiches but cook the rest of the cauliflower and you could make small sandwiches.

Preheat the oven to 450 degrees

Dip all the cauliflower, including the smaller pieces, into the egg wash

Dredge in the seasoned flour

Dredge the onion in the flour

Grease a baking pan with two tablespoons oil

Place the flowered cauliflower in a single layer on the pan.

Bake for ten minutes and then flip the cauliflower over for another 5 minutes.

Try to pair the slices up so they kind of fit together.

They do not have to be perfect.

Put two slices of American cheese and two slices of Hoffman Cheddar cheese on three of the cauliflower slices.

Top with another cauliflower slice

Heat a pan with the butter and add the thin onion slices

Place the cauliflower sandwich on top of the onions and brown one side then flip it over and brown the other side.

Cook till the cheese is melted but try not to burn them so use a medium heat.

Place on a plate with sliced apples

I had to eat this with a fork and knife because it was so cheesy.

I also made about three more small sandwiches.

Mix the leftover smaller pieces of cauliflower with the remaining egg, flour and onion and pour it in the buttered pan.

Just before it was fully cooked I put some cheese on top

Plated it and microwaved it for 15 seconds until all the cheese melted

It was a delicious omelette.

You can make the cauliflower sandwiches ahead of time,  refrigerate them and cook them when you need them.

OR…

After we bake the cauliflower, we can fry the onions in the butter and then make open face sandwiches with the cheese and onion and bake them till the cheese melts.

If I had another cauliflower I would try it so off I go to the market.

Grilled Cheese Club

My dog loves grilled cheese.

Today I made her a grilled cheese club because I wanted to use up my old bread.

Plain, simple food that we forget to make.

Three slices of bread

Four slices of American cheese

Butter for both sides of the bread

Assemble everything

Butter the bread, 2 slices of cheese, bread, two slices of cheese, bread with butter on top The hardest thing is to be patient.

Cook it on a medium low heat and wait. It takes about 3 to 4 minutes

You want that perfect golden brown with the cheese starting to melt.

Flip it over and do the same.

By this time my house smells of melting butter and I am salivating.

Remember, this is for the dog.

Take it out of the pan and cut it into small pieces but you can have one bite and quickly put it in the dog dish so you won’t be tempted to have another.

Watch your dog enjoy it and walk out of the kitchen to your treadmill.

What a morning.

The Bachelor Meal

I did not cook this but my son did.

Hopefully he used serving plates but he put together a great meal.

Rib eye steaks grilled on his green egg at 700 degrees

Blue cheese salad

Crispy small potatoes baked in bacon fat and drizzled with balsamic dressing

Pasta with tomatoes, garlic and mozzarella

Apple crostata with vanilla ice cream

Brownies

Appetizers were cheese nachos, sausage calzones and tomato pizza.

Very impressive.

 

Hamburgers

My sister was at my house and I started to make hamburgers.

In ten minutes I had finished making ten pounds of ground beef into hamburger patties.

She was amazed that it took so little time.

Well I have been making patties for years and for a family of eight so I had to figure out how to do things quickly.

Take your five pound package of 90% ground beef and cut it into 15 pieces. Each patty will be 1/3 of a pound.

Put each piece of meat into a zip lock sandwich bag.

Wash your hands.

You don’t have to touch the meat again because you form the meat threw the bag.

Flatten the meat in the baggie and make into a round patty.

Take all the air out of the bag and seal it closed.

Put an indentation in the middle of each patty so the meat will cook evenly.

Thats it.

They stack in the freezer so well and all this for ten minutes work.

I season them with salt and pepper before I cook them.

Porkchop Sandwich

I am trying not to eat processed food except for my addiction for hot dogs.

So this afternoon I decided to cook the lone pork chop that kept falling out of my freezer.

One  bone in pork chop

1/2 half sliced onion

2 tablespoons oil

One roll

Two tablespoons tzatziki sauce

3 sweet pickles

One tablespoon Sriracha sauce

Put the oil in a non stick frying pan

Add the oil and heat till warm

Add the onion

Season the pork with salt and pepper

Push the onions to the side and place the pork in the middle

Cook till the blood comes to the top of the chop and then turn over

Cook for another three to five minutes till done

Let it sit off the heat for ten minutes

Take the roll and slice it in half

Put the tsatziki sauce on one side of the bread and the onions on the other side

Cut the meat off the bone and place on the bread

The pickles are on the side with the hot sauce.

Eating  the meat off the bone is the best.

I wish another pork chop would fall out of my freezer

Hot Dog

Okay I caved.

Since I ate healthy yesterday and mentioned a hot dog I had to have one today.

Boiled or steamed hot dogs are my favorite

Grilled is so good too but a good boiled hot dog can’t be beat.

Put one hot dog in a pot of water and bring to a boil for about five minutes

Heat up 1/2 cup sauerkraut till it is hot

Take a mushy hot dog roll and put some deli mustard on the bottom followed with the hot dog, sauerkraut and more mustard.

Take two napkins and enjoy

I grew up in New York and I never sat down and ate a hot dog because the street carts had the best DOGS.
