Roasted Hummus Vegetables

How perfect is this.

The hummus is already on the vegetables so I don’t have to dip.

Preheat your oven to 425 degrees.

Line a baking sheet with a silpak.

Lightly oil the pad.

Two cups of baby carrots

One large sliced onion. Don’t make them thin. Just quarter the onion.

One large red pepper cut into one inch squares

One cup of bite size broccoli

One cup of green beans

Any other vegetable you like.

One container of hummus about one cup

Toss all the vegetables in the hummus and coat well.

Place all the vegetables on the pan and don’t let them touch.

Roast for about 15 minutes and then turn over.

Bake for a couple of minutes more.

You want a light browning of the veggies

Sprinkle a little fresh lemon juice and salt.

Try putting the leftovers in pita bread with a slice of cheese and melt it in the microwave.

The hummus makes a light coating on the vegetables similar to a really good fried onion ring

I had to portion these out so I wouldn’t eat the entire tray.
