Lentil and Bean Salad

Since I am eating all the time I thought I should start eating healthy food.

Maybe all this fiber will fill me up.

One package of precooked Trader Joes lentils. I love these.

Two cans of drained small white beans

Three stalks of celery, cut into bite size pieces

1/2 cup chopped parsley. Only use fresh.

Ten large basil leaves rough chop. Only use fresh.

One chopped red pepper

1/2 jalapeno diced

1/2 jalapeño cut into thin circles for decoration

4 to 6 ounces of lemon dressing

1/4 teaspoon garlic powder

1/2 teaspoon salt

Three diced scallions

Mix everything together

Taste to adjust the salt

I added the juice of half a lemon because I love a lot of lemon.

This can be made a day ahead of time.

Black olives, pepperoni peppers or feta cheese would be good add ins.

Serve as a salad or a dip with pita chips.
