Great Tuna Salad

Tuna Salad

Nothing is better than a delicious tuna salad sandwich.

I can make tuna a million ways but every so often I love a good old mayo and tuna sandwich.

I do have a secret I will share with you…

Two cans of solid white tuna packed in water

Drain the water off and chunk the tuna

Three tablespoons of olive oil mayonnaise

One handful of crushed cheddar cheese goldfish crackers

One tablespoon of sweet relish

Mix everything together

Slice a piece of Italian bread in half

Put two or three big scoops of tuna on the bread

Add a handful of arugula and some sweet pickles

That’s  all there is.

Serve with chips

Lemon Farro Salad

I love farro.

It is  a chewy grain that you can add to soups or salads.

Two cups of farro

Six cups of water

Two packages of Knorr  Sason which is a seasoning package  with garlic, onion, annatto and coriander.

If you can’t find the seasoning package , you can use one teaspoon salt, one teaspoon garlic powder and onion powder, 1/2 teaspoon annatto and coriander.

Four beef bouillon cubes.

You can use vegetable cubes if you prefer.

Two diced onion

One tablespoon oil

1 1/2 cups of sliced cherry tomatoes

One cup of green pitted olives

12 pepperoni peppers

One diced red pepper.

One cup of diced fresh parsley.

3/4 cup lemon garlic dressing.

Boil six cups of water

Add the spices, bouillon cubes and farro.

Simmer on low for 30 minutes till the farro is cooked but still chewy.

Keep it in the pot  and it will absorb all the water.

Saute the onion and red pepper in the oil and season with salt and pepper.

Put the farro in a large bowl and add half the salad dressing.

Mix well.

Add everything else but save the pepperoncini peppers for garnish. Add the rest of the dressing on the top of the salad.

Serve at room temperature.

Sometimes I add black olives, feta cheese and a jalapeno pepper.

My family loves this salad and it is a great make ahead meal.

Salami salad

Get ready to smell like garlic and onion and it is worth it.

1/2 pound of diced salami

1/4 pound of provolone cheese

1/4 pound of american cheese

Four diced tomatoes

1 chopped vidalia onion

1/2 teaspoon garlic powder

3/4 teaspoon oregano

One head of chopped romaine lettuce

sliced banana peppers are optional but if you do,  add around 10 or 12

1/2 teaspoon salt

1/4 teaspoon red pepper flakes

3 to 4 tablespoons canola or olive oil

Mix everything together and put in a container to take to the beach with a half dozen rolls.

Make the sandwiches just before serving because the bread will get soggy.

The juice in the bottom of the container is dunk worthy.

 

 

German Potato Salad

photo-4Fabulous recipe and you will never have enough.

Ten to Twelve red or Yukon gold potatoes

One pound of regular or thick sliced bacon

Ten to twelve tablespoon apple cider vinegar

1/2 cup bacon fat

1/2 cup chopped fresh parsley

One chopped vidalla onion or six chopped scallions

One tablespoon honey

One teaspoon salt

One teaspoon ground black pepper

Three ounces of crumbled blue cheese.

Put the washed potatoes in a pot of cold water with one tablespoon of salt.

Bring to a rolling boil and then cook for about 15 to 20 minutes.

Fry the bacon in a big skillet till it is brown and crisp.

Drain on a paper towel.

Save 1/2 cup of the bacon fat in the pan for the dressing.

Add ten tablespoons of the vinegar, honey, salt and pepper to the bacon fat and cook till everything is mixed well.

Drain the potatoes and make sure they are dry.

Cut them into cubes and put them in a bowl while they are still warm with the onions and crumbled bacon.

Add the bacon dressing and toss.

Add the blue cheese and parsley.

Toss gently so the potatoes don’t smash.

Add the remaining vinegar on top of the potatoes.

I don’t peel my potatoes that is why the red or Yukon gold are so nice to use.

You can garnish with grape tomatoes or pepperoncini peppers.

This is great with anything.

 

Steak Supper

Steak Supper

This is one of my favorite meals and so easy.

Start with a ribeye steak

olive oil

salt and pepper

Heat the grill

Brush the meat with the olive oil and sprinkle with salt and pepper.

Place on the grill for two minutes and turn 1/4 turn to get the nice grill marks for another minute

Turn over and repeat the turning to get the grill marks.

Grill to you’re liking or you can take the steaks off the grill and finish cooking in the oven for six to eight minutes.

Make a baked potato in the microwave and then fill with a pat of butter, salt and pepper and sour cream.

Boil the corn.

Mix a quick salad of cucumbers, red peppers and vidalia onions. Dress with some balsamic dressing.

I also cut thin slices of Italian bread and spread it with blue cheese.

Then I toasted them in the toaster oven to melt the cheese.

Great meal for fathers day.

A Caesar salad or lettuce wedges with blue cheese dressing is really nice with the steak.

Oregano salad dressing

New Year, New Diet.

This is a fabulous salad dressing that makes eating salad a real treat.

2 cloves garlic

one teaspoon salt

1/2 teaspoon pepper

1/4 cup red wine vinegar

one teaspoon dried oregano

1/2 teaspoon Dijon mustard

1/2 cup oil

Puree the garlic and salt

Add the pepper, vinegar, mustard, oregano and oil

Pulse till everything is blended well.

Assemble all different greens, peppers, scallions, fresh chopped parsley and tomatoes.

Just make a huge salad and only use a small amount of the dressing.

The flavor goes a long way.
