Fast Shrimp and Broccoli

I was cleaning my freezer and found this lonely bag of small shrimp.

My favorite is jumbo shrimp but I like to keep small shrimp available because you can use them in anything.They make a great shrimp salad.

Today a made a fast stir fry.

One pound of small frozen shrimp

Five tablespoons cornstarch

1/2 teaspoon salt

1/2 teaspoon black pepper or red pepper

Two tablespoons olive oil

One tablespoon butter

Two cloves diced garlic

1/2 of a diced onion

3/4 cup chicken broth

Two cups of broccoli cut into small pieces.

The juice and zest of half a lemon

Fresh chopped parsley

Defrost the shrimp under warm water and drain.

Mix the cornstarch, salt and pepper together.

Toss the shrimp in the cornstarch mixture shaking off any excess.

Heat the oil and butter together in a nonstick pan.

Add the garlic and onion and cook till soft.

Add the shrimp and cook on medium high het till it is almost cooked.

Add the broccoli and chicken broth .

Stir fry for another couple of minutes.

Add the lemon juice and zest.

Top with the parsley.

Serve over baby spinach with rice on the side.
