Greek Lemon Grilled Chicken

Years ago my friend Perry told me how to marinate lamb and I have been doing it ever since.

All I had was chicken and I followed his recipe to make the most delicious meal.

I did change it a little.

8 to 10 pounds of bone in chicken thighs

Trim off any excess skin but leave a little

1/2 cup olive oil

1/2 cup lemon juice

zest of two lemons

6 cloves of diced garlic

One teaspoon garlic powder

Two heaping teaspoons salt

Two teaspoons corse ground pepper

4 teaspoons dried thyme

4 teaspoons dried rosemary

2 teaspoons dried oregano

Combine everything together

Pour over the chicken and rub into each piece

Marinate at least one day in the refrigerator.

Heat the grill to medium high

Place the thighs on the grill and close the top of the grill.

Cook for 8 to 10 minutes

Turn over

Cook for another 8 to ten minutes.

Cover with foil

Finish off in a preheated 425 degree oven for another 30 minutes

Have a feast with rice pilaf, yogurt sauce, fresh pita bread, olives and any vegetable you like.

A big fattoush salad would be perfect.
