Thunder Thigh Thursday
This seems to be my sweet week. Not so good for my thighs but I will try to incorporate protein with sugar.
BBQ Chicken thighs
Wash and defat chicken thighs. I take off most of the skin. Just leave a little for crunch.
Pat dry
Season with adobe seasoning and a little oil
Place on the grill and just char the chicken. Place in a foil pan.
Pour Franks new sweet and spicy chili sauce over the chicken. Cover with foil and bake in the oven for 30 to 40 minutes. Uncover the foil and bake till the sauce is gooey and a little dark.
Serve with cole slaw, potato or pasta salad.
Easy oven baked thighs
Prepare the thighs as above. Make sure they are patted dry
Mix two eggs with 1/2 teaspoon of garlic powder and one teaspoon of salt
In another dish ,pour 2 cups of seasoned panko bread crumbs. You can use regular bread crumbs but the panko is more crispy. Sometimes I mix half and half.
Prepare a large cookie sheet with a non stick sheet. Drizzle with oil to coat the bottom.
Preheat the oven to 400
Dip the thighs in the egg mixture then in the breadcrumbs. Place on the cookie sheet
Put in the oven and bake for 40 to 50 minutes till crisp and brown.
This is great to bring to a picnic but make alot they disappear.
