When I was growing up we always had fish on Friday and I loved it. My husband would never eat anything from the sea so I don’t make it as much. This is one of my favorite ways to cook sea scallops.
One pound of sea scallops
One cup of flour
season with salt and pepper
wash and dry the scallops
Dredge them in the flour lightly. Shake off any excess flour.
Put two tablespoons of butter and two tablespoons of oil in a nonstick pan. Melt together till the pan is hot.
Add the scallops and sear till brown then turn over and brown.
Add the juice of one lemon , two tablespoon of fresh chopped parsley and three tablespoons of capers.
I like this over a handful of arugula with two chopped scallions.
This takes ten minutes and is so well worth every second.
Any vegetable can be cooked as a side dish. Try steamed brocollini .
