Spinach Sunday

This is the spinach that I served with last nights veal. Make extra because it can be used for delicious omelets  today.

Angies Fried Spinach

Eight tablespoons of olive or canola oil

Eight cloves of chopped garlic

Four boxes of frozen chopped spinach

One teaspoon of salt. Maybe more to taste

1/2  teaspoon of crushed red pepper. This can be increased or decreased according to your liking.

Heat a frying pan over medium  heat

Slightly brown the garlic in the oil

This should be very light brown

Defrost the spinach and drain all the water by squeezing  the spinach between your hands . If you don’t take the water out of the spinach you will have a green puddle in your plate. Not very pretty.

Put the spinach in the garlic and oil

This may splatter a little. This is another reason why the spinach should not have  a lot of water in it.

Lower the heat to medium low and saute till the spinach is coated with the oil

Add the salt and pepper

That’s it. You are finished.

Serve as a side dish, put it in a omlette or make calzones.
