Never waste anything. You are going to take the leftover spinach and make fabulous spinach pies.

Use the spinach recipe

Add one small can of black olives-drained

Two pounds of pizza dough. Cut into 16 pieces

One pound of mozzarella cheese-cut into 16 pieces

Preheat the oven to 425

Grease a cookie sheet with crisco

Roll out each piece of dough into a flat circle. Evenly divide the spinach mixture .

Top each with the cheese. Fold the dough over to make a turnover. Make sure the seams are sealed.

Place on the cookie sheets. Top with a little salt.

Space out the pies because they grow.

Bake on the bottom shelf for 15 minutes till brown

Then turn over and bake  till brown

My Mom would make mountains of  these and they all disappeared
