Tuesday- chicken and potatoes in the oven

This could all be assembled the night before and baked whenever you get home. It is the entire meal in one pan.

With all the pans I own, I am using disposable pans more and more.

Cut up one large chicken or use 10 to 12 chicken pieces .

3 large potatoes cut into wedges

2 large sweet potatoes cut into wedges

2 large onions, sliced

4 cloves of garlic

2 teaspoons of oregano

2 teaspoons salt

1 heaping teaspoon of black pepper

3 tablespoons of olive oil

Mix everything together in the pan

Cover with foil and bake one hour

Take the foil off and bake another 15 minutes

Remember…never eat pink chicken

You can substitute sausage for the chicken

Serve with a great big salad full of tomatoes, lettuce and cucs.
