Red Tabbouleh

Red Tabbouleh

This is a takeoff from a friends recipe that I loved.

Two cups of fine bulgar wheat

One cup of warm water

Five small cans of tomato sauce

One teaspoon garlic powder

Eight chopped scallions

One bunch of chopped parsley

1/2 teaspoon salt

1/2 teaspoon black pepper

The juice of one lemon

Six tablespoons good olive oil

Wash the wheat with the one cup of water then drain the bulgar well.

Put into a bowl

Add everything else and mix well

Season with more  salt and pepper if needed


Serve with a green salad or pita chips and vegetables

Sometimes I add some fresh mint  or a fresh red pepper if I have it.
