Curry Couscous

My friend’s Myra and Harriet make this all the time.

Of course they gave me the recipe twice and I lost it twice.

Third time was a charm

One tablespoon butter or oil

One sliced onion

One sliced red pepper

One chopped tomato

1 1/2 pounds of chicken, beef, pork or shrimp

Cut into thin slices or bite size pieces

One 24 ounce package of your favorite frozen vegetable.

I used peas and carrots.

1 1/4 cups chicken broth

One package of Near East Mediterranean Curry Couscous

1/2 cup raisins

1/2 teaspoon garlic salt

1/2 teaspoon black pepper

cilantro for garnish

Melt the butter and add the meat

Stir fry for 2 minutes

Add the onion, pepper and tomatoes and stir fry for another two minutes

Make sure the meat is cooked.

Add the seasoning mix from the couscous, the broth and the frozen vegetables

Combine everything

Bring to a boil

Add the couscous and raisins

Add the garlic salt and black pepper

Mix everything together

Take off the heat and cover till all the broth is absorbed

Garnish with cilantro.

This is great hot but also good cold

I also had it with a dollop of greek yogurt.
