Fillet of Sole
One of my favorite things in life is a McDonald fillet o fish.
Every once in a while I have to eat one or two.
Today I made my own.
The fillet of sole was on sale and I took advantage of it.
My Mom used to make a platter of breaded sole on a Friday night and I always prayed for leftovers.
Two pounds of nice white fillet of sole
Two eggs
One teaspoon garlic powder
3/4 teaspoon salt
One tablespoon dried parsley or two tablespoons of fresh
One and a half cup of panko breadcrumbs
Oil
Whisk the eggs with the garlic, salt and parsley
Add the sole and really coat it well.
Dip into the panko and coat evenly
Heat three tablespoon of oil in a nonstick skillet till it is hot.
Add the fillets so they do not touch.
You will have to make them in batches.
That means you have to use more oil with every batch.
Cook till the fish is golden brown then flip over.
This takes about five minutes because they are so thin.
Thats it. Cut up lemon wedges and serve on fresh spinach and scallions.
That was for my healthy eaters.
I took mushy white bread and made tartar sauce to put on the two slices.
Placed a fillet to fit covered with scallions and spinach.
This is so good.
Tartar Sauce is 1 1/2 teaspoon sweet pickle relish mixed with two tablespoons good mayonnaise.
