Blue cheese, fig, caramelized onion and pear pizza
This is one of the weirdest and most delicious pizza you will ever eat.
I copied it from the news paper and changed it a little by adding and decreasing some of the ingredients.
After a couple of trials I think this is pretty good.
My family loves it.
Two sliced onions
One tablespoon oil
One teaspoon finely chopped dried or fresh rosemary
One pound pizza dough
2/3 cup fig jam
1/2 cup Parmesan cheese
1 1/2 tsp. dried or fresh thyme
One to two large thin sliced pears
4 ounces blue cheese
cayenne pepper
3 handfuls arugula
One teaspoon olive oil
Saute onions in oil and cook till soft and caramelized
Grease the bottom of a cookie sheet with a thin coat of Crisco
Stretch out the pizza dough to fit a 9 by 13 pan
Sprinkle with the crushed rosemary
Spread with a thin layer of the fig jam on the pizza
Sprinkle with the thyme
Sprinkle with 1/4 cup Parmesan cheese
Layer the sliced pears
I always eat at least a half a pear while I am cooking so this is why you need two pears.
Add the blue cheese
Add the rest of the Parmesan cheese
Season with the cayenne pepper
Add the cooked onions with the oil and spread evenly
Bake in a preheated 475 degree oven on the bottom shelf for 10 to 15 minutes.
Make sure the crust is nice and brown
Mix the arugula with the oil and put on the top of the cooked pizza.
This is so good and very different.
