21 Sep

Asparagus Pizza

One pound pizza dough

Crisco to put on the pan

3 cups seasoned fresh tomatoes

One cup cut asparagus

8 slices diced cut ham

13 slices Muenster cheese slices

9 diced string cheese sticks

1/2 teaspoon oregano

1/2 teaspoon garlic powder

1/4 teaspoon black pepper

1/2 teaspoon salt

1/2 diced onion

6 basil leaves

3 tablespoons olive oil

Dice three cups of tomatoes and season with oregano, garlic powder, basil, onion, salt, pepper and olive oil.

Grease a pizza pan with the Crisco.

Use a very thin layer.

Stretch out the dough to fit the edges, working with your fingers.

Place the slices of Muenster cheese on the dough in an even layer.

This is the secret.

If the tomatoes are watery, put them in a saucepan and cook the water off by bringing the tomatoes to a boil and watching it closely. It should look a little dry.

Stir often, then cool and put it on the dough.

Sprinkle the asparagus, ham and diced string cheese over the pizza.

Finish with a drizzle of olive oil

Bake in a preheated 450 degree oven for about 15 minutes but check after ten minutes because all ovens are different.

Cook on the bottom shelf of the oven.

Grilled Meatball and Cheese Pizza

26 May

Meatball pizza

I guess I have become the real Italian Mama.

It doesn’t matter what I am cooking when my children come to visit.

I always have a big pot of meatballs sitting in a tomato gravy on the stove.

The meatballs become a snack, appetizer or a meal.

This week I had four lonely meatballs leftover.

I also had a pound of pizza dough.

Heat your grill to high

Take a 9 x 13 pan and grease lightly with Crisco

Flatten the pizza dough to fit the pan.

Drizzle with olive oil, salt and black pepper.

Take the dough off the pan and place it on the hot grill.

Don’t touch it till the bottom of the crust is firm and it starts to puff.

Flip it over and cook the other side.

Place it back in the pan.

Cut three slices of provolone cheese in half.

Place them on the grilled dough.

Slice the four meatballs into medium thin slices.

Heat them up and set aside.

Place them on the cheese.

Add the tomato gravy

Sprinkle with grated Romano cheese.

Add four ounces of grated mozzarella cheese on top

Place on the grill in the pan or in a 450 degree oven until the cheese melts.

This only takes about five minutes.

That’s it.

Great way to use up your leftovers.

Smoked Salmon Pizza

24 Dec

salmon pizza

Pretty and easy. It also travels well.

What is it with me? I am always transporting food.

I love it.

This is the simple recipe you will make over and over again.

One pound of pizza dough.

olive oil

salt and pepper

12 ounces of good thin sliced smoked salmon

8 tablespoons garlic and herb pub cheese.

1/2 thin sliced red onion

1/2 thin sliced cucumber

5 tablespoons of capers

10 to 12 grape tomatoes, sliced in half

2 handfuls of arugula. More if you like it.

Preheat the oven to 450. The oven has to be very hot.

Grease the cookie sheet with the Crisco. A very thin layer.

Stretch out the dough so it touches the ends of the pan.

Sprinkle with maybe a teaspoon of olive oil.

Spread over the dough

Sprinkle with salt and pepper.

Bake for about 15 minutes on the bottom shelf in the oven.

It may need more time because you want a nice crisp bottom.

Let the dough cool a little.

Spread with the garlic and herb cheese

Spread the salmon evenly on the dough

Add the cucumbers, onion, tomatoes, capers and arugula.

Sprinkle with olive oil, salt and black pepper.

Fabulous appetizer. I make it for breakfast.

If you grill the dough it is even better but it is too cold and wet to go outside now.

Always a big hit and so good.
