Breakfast Sandwich

This is one of my favorite breakfast sandwiches and I have to be honest I can eat them all day.

Two sliced, toasted and buttered bialeys

One avocado, 1/2 on each sandwich

Two paper-thin slices of red onion

Two Handfuls of arugula

Two thin slices of tomato

Four perfectly fried eggs. Make sure the yolk is still runny.

Four slices of crisp bacon

Salt and pepper

As much Franks Red Hot sauce as you like

This makes two sandwiches

Start with the toasted bialey

Butter  the inside of each bialey

Layer 1/2 of the avocado on top and smash down to form a flat surface

Place the onion slice, tomato slice, one handful of the arugula and  two slices of bacon on the avocado

Gently place the two fried eggs on top

Season with salt and pepper and if you want more spice add the Franks hot sauce.

Franks is a staple in my house. I think my kids would drink it if I let them.

This recipe makes two sandwiches because whenever I sit down to eat someone appears to eat mine.

The other day I did eat two, felt too full,  guilty but very satisfied.

A slice of cheese makes this sandwich decadent.


BLT Salad

BLT Salad

This was on Pinterest and I had to make it.

Take two slices of bacon and wrap it around a ripe tomato.

Place it on some foil and bake it for one hour at 350 degrees.

The bacon has to be crisp.

Drain it on a paper towel and place it on a bed of lettuce or whatever greens you like.

Put a teaspoon of mayo on top and enjoy.

This is so pretty.

I served it with bread to absorb all the delicious tomato juice.

Easy Baked Beans

Easy Baked Beans

These are so easy I am a little embarrassed  to admit I make them.

Oh well, guilt over. Lets get cooking.

One large can of baked beans. I really like Bushs Baked Beans. Any flavor is okay. I like the brown sugar and onion.

One medium chopped onion

1/4 pound diced bacon

One teaspoon brown sugar

Pour the beans into an oven proof casserole dish with a lid.

Add the chopped onion

Render the fat off the bacon.

Add the half cooked bacon on top of the onions.

Sprinkle with the brown sugar

Cover with the lid

Microwave for 6 minutes

Keep warm in a 300 degree oven until ready to serve



Andy’s bacon omelette

Andy's omelette

I am so proud of my children because they all cook well.

They try everything and it usually comes out delicious.

I went to Trader Joe’s and found Sweet Sriracha Bacon Jerky.

This is on my no buy list because it is so good. I could eat the entire bag.

Andrew made an omelette with it.

Three eggs

Three slices of bacon

One whole green diced onion

Two teaspoons feta cheese

Three teaspoons  cheddar cheese

One teaspoon olive oil

Heat the oil in a non stick pan

Add the scallions and just soften them.

Beat the eggs and add to the scallions on a low flame.

Add the cheeses and three slices of bacon.

The bacon is already cooked so you don’t have to mess with another pan.

Flip the omelette in half and eat like you have never eaten an omelette before.

So good, spicy and definitely antacid worthy.


Ultimate Grilled cheese

My friend Myra and I, went to the Worcester Art Museum and had a fabulous lunch.

I had to make this sandwich my way.

Two slices of any good bread you like.

I used a really nice wheat bread.

One teaspoon of fig preserves

Four slices of Hoffman cheddar cheese

1/2  sliced onion

One tablespoon butter

Two thin slices of a pear

Two slices of crispy cooked  thick cut bacon

Melt the butter in a small frying pan

Add the onions and cook till they are really soft

Spread the fig preserves on each side of the bread

Add the cheese, onions, pears and bacon.

Put the second slice of bread on the sandwich.

Place the sandwich in the same pan that you cooked the onion.

Cook the sandwich slowly because you want the cheese to melt and you don’t want the bread to burn.

I used a sandwich weight or you can use a panini machine.

Serve with the remaining pear slices and a cup of good soup.


Anytime Breakfast Sandwich

Anytime Egg Sandwich

Every time I pass a Burger King I check my watch to see if it is still breakfast time.

My husband was addicted to fast food and he did corrupt me.

I love the croissant sandwich.

It is just as easy to make it at home.

One croissant.

Buy the big ones at B.J.s

Two scrambled eggs

One slice of american cheese

Two slices of ham, bacon or sausage.

Slice the croissant in half

Place the slice of cheese on one side

Scramble the eggs and season with salt and pepper.

Place the hot eggs on the cheese

Cook the bacon, ham or sausage and place that on top of the egg

Top with the other side of the roll and eat.

Too good and not  hard.

Put $2.99 in your bank and save it for when you don’t have time to cook.

German Potato Salad

photo-4Fabulous recipe and you will never have enough.

Ten to Twelve red or Yukon gold potatoes

One pound of regular or thick sliced bacon

Ten to twelve tablespoon apple cider vinegar

1/2 cup bacon fat

1/2 cup chopped fresh parsley

One chopped vidalla onion or six chopped scallions

One tablespoon honey

One teaspoon salt

One teaspoon ground black pepper

Three ounces of crumbled blue cheese.

Put the washed potatoes in a pot of cold water with one tablespoon of salt.

Bring to a rolling boil and then cook for about 15 to 20 minutes.

Fry the bacon in a big skillet till it is brown and crisp.

Drain on a paper towel.

Save 1/2 cup of the bacon fat in the pan for the dressing.

Add ten tablespoons of the vinegar, honey, salt and pepper to the bacon fat and cook till everything is mixed well.

Drain the potatoes and make sure they are dry.

Cut them into cubes and put them in a bowl while they are still warm with the onions and crumbled bacon.

Add the bacon dressing and toss.

Add the blue cheese and parsley.

Toss gently so the potatoes don’t smash.

Add the remaining vinegar on top of the potatoes.

I don’t peel my potatoes that is why the red or Yukon gold are so nice to use.

You can garnish with grape tomatoes or pepperoncini peppers.

This is great with anything.
