Spicy Buffalo Dressing

I love buffalo anything.

I make buffalo chicken, pizza, cauliflower and now salad.

This is so easy I don’t even make a bottle, I just make it as I want it.

Two ingredients.

Thats it!

3 tablespoons good blue cheese dressing

One tablespoon Franks Red Hot Sauce.

Mix it together and pour it over your salad.

I made a green salad with scallions, blue cheese chunks and leftover cubed chicken.

Simple, easy, fast and GOOD.

This satisfied my salt and spicy craving.

I did heat the chicken so it wasn’t cold from the refrigerator.

If you don’t like blue cheese you can use ranch dressing.

Not bad but I am a blue cheese lover.

I pulled a pork and put this on my sandwich and enjoyed every mouthful.

This is also a great spicy dip.

Roasted Cauliflower with Caper Vinaigrette

I could drink this salad dressing but instead I will put it on everything.

2/3 cup olive oil

One tablespoon drained capers

2 tablespoons chopped shallots

2 cloves chopped garlic cloves

1/3 cup red wine vinegar

One teaspoon whole grain Dijon mustard

Salt and pepper to taste

Put the garlic and shallots in the magic bullet and pulse till almost smooth

Add the oil, vinegar and mustard and pulse till the dressing is smooth

Add the capers for a two second pulse.

Thats it.

One head of cauliflower cut into florets

2 tablespoons olive oil

1/2 teaspoon salt and pepper

Preheat the oven to 400 degrees.

Mix the cauliflower, oil, salt and pepper together making sure to coat the cauliflower with the oil.

Place on a pan lined with foil. Easy cleanup.

Roast for 30 minutes checking after 20 minutes to turn cauliflower over.

You want a light brown crust to be on the cauliflower.

Place a big handful of arugula or spinach on a plate and place the cauliflower on top.

Drizzle the caper dressing on top.

I baked about eight shrimp and served them with the cauliflower

I also serve this vegetable salad with fish, pork and chicken.

Avocado Salad dressing

I love this stuff.

Its like liquid guacamole

I have been putting it on everything like fish, chicken, vegetables, potatoes.

I even used it instead of mayo on my sandwich but it is a salad dressing.

It only lasts about a week so enjoy all of it.

One ripe large avocado, peeled and pitted

One tablespoon fresh lime juice

Two cloves of fresh garlic

1/3 cup sour cream

1/3 cup cilantro

3 Tablespoons  olive oil

1/4 teaspoon salt and black pepper

6 drops Tabasco sauce

8 drops green pepper Cholula sauce

Put everything in the food processor and blend till smooth

Sometimes this needs 1/2 teaspoon honey but it is optional

Keep in an airtight container

Chimichurri

This is a delicious marinade or dipping sauce.

Two bunches of cilantro

One bunch of parsley

1/4 cup fresh oregano or one teaspoon dry

Three big cloves garlic

One teaspoon salt

One tablespoon jalapeño pepper

Four cloves garlic

One small onion

3/4 cup good olive oil

1/2 cup red wine vinegar

Put the garlic, salt, onion and pepper in a food processor and blend till smooth.

Add the parsley, oregano and cilantro and pulse till smooth

Add the vinegar and pulse

Stream in the oil and mix till you have a smooth paste.

Serve with everything

I love it with beef, pork, chicken and fish.

My son even puts it on his eggs.

This is also delicious to make a potato or pasta salad

Strawberry Avocado Salad

My friend Myra told me about this recipe so I started searching the web and found it at the http://www.allrecipes.com .

I have to admit I did change it up a little because I thought the dressing was too sweet.

2 tablespoons olive oil

4 teaspoons honey

2 tablespoons apple cider vinegar

2 teaspoons lemon juice

Mix all together and this is the honey vinaigrette dressing.

4 cups mixed greens including arugula and spinach.

One sliced avocado

8 to 10 sliced strawberries

1/2 cup pecans (optional)

two slices of chopped steak, feta cheese, goat cheese or chicken

Mix the greens, strawberries and avocado together

Drizzle with a couple tablespoons of dressing

Add whatever topping you like.

Do not over dress this salad.

The dressing is delicious but still sweet.

All the corned beef is on sale now so take advantage of it.

Two two pound corned beef roasts

One recipe of thousand island dressing

1/2 can drained sauerkraut

One pound loaf of sliced rye bread

1/2 pound Swiss cheese

Mustard for dipping

Cook your corned beef according to the package directions

My meat simmered for several hours.

You can tell when its done when the meat pulls apart easily.

Drain the water and cool the meat.

Now I take the meat and ruff chop it in the food processor

Don’t make a paste just do a ruff chop so when you eat the small appetizer you don’t have to bite into a piece of meat.

Set aside

Cut all your bread into 2×2 squares

Place all the bread in a single layer on a baking sheet.

You will need two sheets

Place one teaspoon of the thousand island dressing on each square

Layer one rounded teaspoon of the corned beef or a little more.

Layer 1/2 teaspoon drained sauerkraut

Top with a 2×2 slice of Swiss cheese

Bake in a 350 degree oven till the cheese is melted about 5 to 10 minutes. I like the cheese just a little melted.

Serve with different mustards, cole slaw and chopped onion

These things disappear so fast and they are also great as leftovers.

This can be made in the morning and refrigerated till you are ready to bake them.

The thousand island dressing is one cup of mayonnaise, 1/2 cup ketchup and 1/2 cup sweet pickle relish. Mix well.

Put four leftover squares together and place a fried egg on top for a very easy morning after breakfast.

 

 

Oregano salad dressing

New Year, New Diet.

This is a fabulous salad dressing that makes eating salad a real treat.

2 cloves garlic

one teaspoon salt

1/2 teaspoon pepper

1/4 cup red wine vinegar

one teaspoon dried oregano

1/2 teaspoon Dijon mustard

1/2 cup oil

Puree the garlic and salt

Add the pepper, vinegar, mustard, oregano and oil

Pulse till everything is blended well.

Assemble all different greens, peppers, scallions, fresh chopped parsley and tomatoes.

Just make a huge salad and only use a small amount of the dressing.

The flavor goes a long way.
