Ginger Dressing

This dressing is driving me crazy.
I love it and have tried a million different recipes but I think I finally got it.
1/2 pound cut carrots
One large sliced onion
2 tablespoons diced ginger
One tablespoon sugar and one tablespoon honey
1/4 cup soy sauce
1/2 cup only rice vinegar
3/4 cup canola oil
1/2 teaspoon salt
Put two tablespoons of oil in a pan
Add the carrots and onions
Cook slowly until the carrots are soft
Be careful not to brown or burn the carrots . Just soften them
Add the one tablespoon of sugar at the end.
Put everything in a processor
Blend till it is smooth
Taste to adjust the salt.
I love this recipe because it was smooth but I still had to play around.
I took 1/2 cup of the dressing and added just a little cream (2 tablespoons) to some of the dressing.
I could have had it for a cocktail
Plain is good too.
Serve this over iceberg lettuce with a couple of egg rolls or fried wontons.
