Rice Paper Rolls

Rice Paper Roll Ups

Talk about a fabulous low calorie treat.

This is it but be careful of a high calorie dipping sauce.

This is the first time I used rice paper and it is a little tricky but not hard.

Everything has to be prepared before you begin.

Lay out the rice paper.

Put warm water in a pie plate

Cut all your vegetables and line them up

All the vegetables have to be sliced thin

I used carrots, celery, cucumbers, avocado, basil leaves, green onions,  blanched green beans and raw spinach leaves.

My sister used seasoned ground pork, carrots, cucumbers and green onion

I will try shrimp with mixed Asian vegetables.

Anything can be a filling but don’t fill it too much because you have to bite into it.

Also make sure the filling is dry because it will melt the rice paper.

Dip the rice paper in the water for about ten to 15 seconds.

Place in the palm of your hand.

Put the filling in the middle and fold the sides up than fold the ends in to make a roll.

Place on a lettuce leaf because the rice paper is sticky and will stick to the plate.

It looks really pretty.

Serve with the carrot ginger dressing, Franks Chili sauce, Spicy vinegar, beau monde sauce or just plain soy sauce.

The rice paper gets hard if you make them a day ahead so try to make them fresh.

I first saw these on Pinterest and have been reinventing the roll.


Lime Avocado Salad

Lime Avacodo Salad

Talk about simple and refreshing, this is the salad.

One cup of chopped romaine lettuce

Two big handfuls of arugula

1/2 chopped vidalia onion

One large ripe diced avocado

One cup of homemade garlic ciabatta bread croutons

The juice of one big juicy lime

1/3 teaspoon garlic powder

1/3 teaspoon salt

1/4 teaspoon ground black pepper

3 tablespoons of olive oil

Mix everything together

Add more olive oil if the lime is too tart

Add ins can be shaved parmesan cheese, goat cheese crumbles, feta or diced cucumbers

Great with grilled fish or chicken


Strawberry Avocado Salad

strawberry avacado salad

My friend Myra told me about this recipe so I started searching the web and found it at the http://www.allrecipes.com .

I have to admit I did change it up a little because I thought the dressing was too sweet.

2 tablespoons olive oil

4 teaspoons honey

2 tablespoons apple cider vinegar

2 teaspoons lemon juice

Mix all together and this is the honey vinaigrette dressing.

4 cups mixed greens including arugula and spinach.

One sliced avocado

8 to 10 sliced strawberries

1/2 cup pecans (optional)

two slices of chopped steak, feta cheese, goat cheese or chicken

Mix the greens, strawberries and avocado together

Drizzle with a couple tablespoons of dressing

Add whatever topping you like.

Do not over dress this salad.

The dressing is delicious but still sweet.

Spicy Tortilla Soup

Tortilla Soup Tortilla Soup

This is a delicious soup for a cold night or a summer BBQ.

3 tablespoons oil

One large chopped onion

2 cloves chopped garlic

One diced red pepper

One diced hot pepper.

I usually use a jalapeno and take the seeds out.

One teaspoon  ground cumin

48 ounces of chicken broth

Two 14.5 ounce can of Rotelle or any other diced tomatoes with chili.

1/2 jar of salsa about 8 to 10 ounces.

One cup of corn

1/2 cup chopped cilantro

One can of rinsed and drained black beans

2 cups or more of pulled pork or leftover diced chicken

Tortilla chips crushed

Shredded Monterrey Jack or any other cheese you like

Sour cream




Heat the oil

Add the onions and garlic and cook till soft

Add the peppers and season with salt and pepper

Add the cumin and cook just for a couple of minutes. You can actually smell it cook.

Then add your broth, tomatoes, black beans and corn and about 1/4 cup of the cilantro.

Let this cook for five minutes then add your pork or chicken.

Cook for another ten to fifteen minutes.

Spoon the soup into big bowl and add the crushed chips, cheese, sour cream, cilantro, diced avocado and lime wedges.

I usually serve this with cheese quesedilla, grilled cheese or potato pancakes






Tuna Salad with Avacado and Grapefruit

Tuna Salad

This is a combination of Giada and Ina Gartens recipes. I think it is the best of all three recipes.

Six tuna steaks about a half a pound a piece

Two tablespoons olive oil for basting the tuna

Salt and pepper for sprinkling over the fish

8 tablespoons olive oil for the dressing

1 1/2 teaspoons salt

one teaspoon black pepper

Zest of one large lime or two small

One teaspoon wasabi powder

6 tablespoons lime juice

2 teaspoons soy sauce

15 dashes hot sauce

Two tablespoons honey

Two diced avocados

1/4 diced red onion

2 caramelized sliced white onions

1/2 cup chopped parsley

1/4 cup chopped diced cilantro

Two heads of chopped Romaine lettuce or mixed field greens

One box of arugula

1 sliced fennel bulb

1 sliced  seedless cucumber

5 diced scallions

2 cups seeded and peeled grapefruit sections with their juice

One box of cherry tomatoes

Heat the grill to high

Brush the tuna with the olive oil, salt and pepper

Grill on each side about two minutes. You want the tuna rare.

Set aside.

Mix olive oil, salt, pepper,  lime zest, wasabi, lime juice,  soy sauce, hot sauce, and honey. Set aside

Toss the diced avocado in the dressing

Start making the salad.

Arrange the lettuce , arugula, cucumber, red onion, parsley, cilantro and fennel. Toss with half the dressing. Slice the tuna and place it on top. And the rest of the dressing including the avocados.

Sprinkle with the caramelized onions.

Decorate with the grapefruit, scallions and cherry tomatoes.

Drizzle the grapefruit juice on top.

This is so pretty and great for a main course.




Seared Tuna Salad

This is not your tuna with mayo.
This is a recipe that Ina Garten developed and I changed just a little.
It is delicious and well worth your time.
4 tuna steaks
1/2 tsp. olive oil to brush the tuna with
salt and pepper
8 tablespoons olive or canola oil
One teaspoon salt
One teaspoon ground black pepper
Grated zest of two limes
One small jalapeno pepper without the seeds
Juice two big limes or three small limes
2 teaspoons soy sauce
15 dashes of franks red hot sauce
One tablespoon honey
Process everything in the magic bullet till smooth.

2 ripe diced avocados
4 diced scallions including the green tops
One small diced red onion
1/2 cup diced fresh parsley
1/2 cup fresh diced cilantro
3 cups arugula
3 cups baby spinach

Brush the tuna with oil and season with salt and pepper.
Sear in a hot skillet for a minute or two on each side.
Let it rest and then slice into chunks or slices.
Make the dressing .
Pour some dressing on the avocado so it doesn’t brown.
Place the spinach and arugula in a big bowl.
Place the tuna, scallions, onion, parsley and cilantro on top.
Add the dressing . You may not have to use all of it so add half and toss then add more if you need it.
Add the avocado on top and toss gently.
I served this with grilled pizza dough that I brushed with olive oil and sprinkled with salt and garlic powder.
This is a great main corse on a hot summer night or a fancy lunch for the girls.
Just a personal note . Ina Garten has the best cookbooks.
I have all of them and I change a recipe around most of the time.
Some of her recipes are very close to my Moms but with her twist.
Her twist is pretty good.

Sweet Potato Chicken Patties

Sweet Potato Chicken Patties


I am tired of the same old stuff so I became the mad scientist yesterday.

I had some ground chicken and it looked so boring so I started to mix things together.

One pound of ground chicken

2 eggs

1/2 cup fresh chopped parsley

2 tablespoons diced red pepper

One large diced onion

2 cloves diced garlic

2 tablespoon oil plus more for the frying

One large leftover diced baked potato

1/2 cup cheddar cheese

1/4 teaspoon black pepper

2 tablespoons balsamic mayonnaise

2 tablespoons sriracha sauce.

1/2 box sweet potato pancake mix

Saute the onion, potato and garlic in the oil and cook till soft. Take off the heat.

Add the chicken, eggs, parsley, red pepper, cheese ,salt and pepper, mayonnaise and sriracha sauce.

Do not over mix or it will turn to mush.

Make into twelve patties.

Coat with the sweet potato mix crumbs until they aren’t sticky any more.

Fry in medium hot oil till light brown but not cooked all the way .

Finish baking in the 350 degree oven for 25 minutes

Place a slice of Hoffman cheddar on each patty.

Serve on a soft roll with sriracha mayonnaise on each side, lettuce,

red onion, avocado slices  and a splash of lime on the avocado.

Sweet pickles on the side with a handful of berries.

The sweet potato crumbs make a crunchy crust and has a sweet taste.

I am going to try the crumbs on pork chops.

If you don’t want to have a sandwich, serve the patties on top of a fabulous salad.

Siracha Mayonnaise is; one tablespoon sriracha and two tablespoons mayonnaise.
