French Toast Casserole

This is the perfect example of a recipe I read and changed completely.

Ten slices of potato bread or any bread that is almost stale .

Four ounces of cream cheese

2 1/2 teaspoons brown sugar

4 eggs

2 1/4 cups milk

3 tablespoons white sugar

One teaspoon vanilla

One teaspoon butter

2 tablespoons white sugar

One teaspoon cinnamon

Preheat oven to 350 degrees

Butter a 8×8 baking pan

Spread the cream cheese on the bread.

Add 1/4  teaspoon of brown sugar on each  slice.

Make sandwiches and cut each sandwich into 12 cubes.

Place into the buttered pan.

Mix the eggs, 3 tablespoons of white sugar, milk, salt and vanilla together and pour over the bread.

Let this stand for about 1/2 an hour.

Sprinkle with the 2 teaspoons of sugar and cinnamon.

Dot with the butter.

Bake for 50 minutes.

It puffs up and gets golden brown.

I add 1/2 cup of raisins, dried cherries  or  chopped apricots but I did make it plain this time.

Feel free to add blueberries, strawberries or any other fruit you like.

You can also make this the night before.

Cover it well and refrigerate.

Bake in the morning for a great breakfast with maple syrup.


Fabulous French Toast

French Toast

I woke up this morning starving. This is not a good thing because I can really pack it away.

Since I never throw away anything I spotted this loaf of potato bread.

I bought it for my grandson and he didn’t eat it.

6 slices of bread cut in half.

2 eggs

1 1/4 cups of milk

1/2 cup french vanilla coffee creamer

1/2 teaspoon vanilla

Mix the eggs, milk, creamer and vanilla till everything is incorporated.

Dip the bread in the mixture and place in a preheated nonstick pan with one teaspoon of melted butter.

Brown on both sides then repeat to finish the rest of the bread.

Make sure you use more butter with every batch of bread.

All finished.

Serve with fresh fruit and maple syrup.

A good cup of hot coffee is great.
