French Toast Casserole
This is the perfect example of a recipe I read and changed completely.
Ten slices of potato bread or any bread that is almost stale .
Four ounces of cream cheese
2 1/2 teaspoons brown sugar
4 eggs
2 1/4 cups milk
3 tablespoons white sugar
One teaspoon vanilla
One teaspoon butter
2 tablespoons white sugar
One teaspoon cinnamon
Preheat oven to 350 degrees
Butter a 8×8 baking pan
Spread the cream cheese on the bread.
Add 1/4 teaspoon of brown sugar on each slice.
Make sandwiches and cut each sandwich into 12 cubes.
Place into the buttered pan.
Mix the eggs, 3 tablespoons of white sugar, milk, salt and vanilla together and pour over the bread.
Let this stand for about 1/2 an hour.
Sprinkle with the 2 teaspoons of sugar and cinnamon.
Dot with the butter.
Bake for 50 minutes.
It puffs up and gets golden brown.
I add 1/2 cup of raisins, dried cherries or chopped apricots but I did make it plain this time.
Feel free to add blueberries, strawberries or any other fruit you like.
You can also make this the night before.
Cover it well and refrigerate.
Bake in the morning for a great breakfast with maple syrup.
