Chicken on fried dough with fruit salad

This is a perfect example of using what you have in the refrigerator.

It’s so pretty and very good.

1/4 pound of pizza dough

Olive oil

Salt and pepper

One boneless chicken breast

lemon juice

garlic powder

One handful of arugula

One handful of spinach

1/2 small red onion

One sliced kiwi

10 to 12 raspberries

About an inch or two of crumbled goat cheese

Three tablespoons of my new favorite raspberry vinegrette.

Heat one tablespoon of olive oil in a small skillet

Stretch out the dough to fit the pan

Sprinkle with salt and pepper

Place in the hot skillet and cook till both sides are puffed and light brown.

Place on a paper towel.

Season the chicken with the salt, pepper, lemon and garlic.

Place in the same pan with a little more olive oil and cook till the chicken is done.

There should never be any pink in chicken breasts.

Place the cooked chicken on the dough

Mix the greens and onion together

Place the chicken and dough on a plate.

Place the greens next to it

Sprinkle with the raspberries, goat cheese and dressing.

Add the kiwis on the side.

I like a little yogurt and cucumber on the chicken.

Slice threw the chicken and dough with some salad. It is wonderful.

Pickled Vegetables

Pickled Vegetables

Take out your mandolin slicer and start slicing everything very thin.

I just wanted something different and this was perfect on my pulled pork sandwich.

4 cups thin sliced radishes

4 cups thin sliced carrots

2 thin sliced jalapenos. Take out the seeds.

Two large thin sliced red onions

1/2 teaspoon salt

1/2 cup chopped cilantro

One cup white vinegar

1/2 cup cider vinegar

1/2 cup red wine vinegar

3/4 cup white sugar

Mix all the vegetables with the salt and cilantro together.

Set aside

Mix all the vinegar and sugar in a pot and bring to a boil to dissolve the sugar.

Let this cool  then pour over the vegetables and mix well.

Put everything in an air tight container.

You can add any other kind of vegetables but this is pretty good as is.

 

 

Chopped Vegetable salad

Chopped Vegetable Salad

Every so often I get tired of lettuce as a salad.

Tonight I just wanted something cold and crunchy and low calorie.

One large seedless cubed cucumber

One container of grape tomatoes

Two cubed red peppers

One small chopped red onion

One handful of chopped parsley or cilantro

One bunch of steamed chopped asparagus

Two handfuls of arugula

Mix everything together.

Serve with your favorite salad dressing.

 

Buffalo Chicken Calzone

Buffalo Calzone

One pound of pizza dough

4 cups of leftover shredded chicken

1/2 bottle Franks Wing sauce

Two ounces of crumbled blue cheese

Four slices of Provolone cheese

1/2 thin sliced red onion

Roll out the dough to a rectangle about 9 x 13. I like mine a little smaller so the dough is not too thin.

Place the onion slices on the dough.

Add four slices of provolone cheese.

Mix the chicken with the Franks Wing Sauce.

Place the chicken on the dough with the cheese.

Place the blue cheese on top.

Start rolling the dough and try to keep all the mixture inside so tuck in the ends every so often. It should look like a log.

Place on a greased piece of aluminum foil or a sikpac.

Bake at 450 degrees  on the bottom shelf for about 20 minutes or until it is dark brown.

Remember to spread everything all over the rectangular rolled dough.

Serve with celery and carrot sticks.

 

Grapefruit Salad

Grapefruit Salad

It seems that as soon as I went on high blood pressure medicine grapefruits came into vogue.

As you probably know I should stay away from grapefruit because it interacts with the medicine.

So, I make this recipe lovingly for my children and only have a small tasting to make sure everything is balanced.

One 5 ounce package of baby spinach

One 5 ounce package baby arugula

1/2 thin sliced red onion

One large bunch of steamed or roasted asparagus. Cut into one inch pieces.

3 pieces of sliced fennel

15 black olives

One cup of drained grapefruit slices

2 avocados cut into cubes

One cup of shaved  Romano cheese

Dressing

3 cloves garlic

1/2 teaspoon salt

3/4 cup of the grapefruit juice

3 tablespoon  balsamic vinegar

2 tablespoons balsamic glaze

One cup olive oil

1/2 teaspoon corse ground black pepper

Mix all the greens then layer everything else.

Take the salt and garlic and puree till it is a paste

Add the vinegar, glaze and grapefruit juice and mix  well

Add the oil and  pepper.

Mix till a dressing is blended together

I always underdress the salad and then serve extra dressing on the side.

I served this with  baked coconut cod

 

 

Shrimp Salad

Shrimp Salad

This is a combination of two recipes and my family loved it,

3 tablespoons chopped fresh mint

One big paper thin sliced red onion

Salt and pepper

Two cups of rough chopped fresh Italian parsley

1/4 cup capers

1/4 cup extra virgin olive oil

4 tablespoons lemon juice

3 tablespoons lemon zest

1 1/2 pounds of U 16-20 peeled and de-veined shrimp. Leave the tails on.

Two large cloves of chopped garlic

1/4 teaspoons cayenne pepper

1/4 teaspoon salt

Two tablespoons olive oil

Honey for garnish

Mix the mint, onion, salt, pepper, parsley, capers, 2 tablespoons lemon juice, 2 tablespoons lemon zest and 1/4 cup olive oil

Set aside

Heat the remaining two tablespoons of olive oil on high heat

Add the garlic and remaining lemon zest for one minute

Salt and pepper the shrimp

Add the shrimp and stir fry till pink and firm about another two to three minutes

Take off the heat and add the remaining lemon juice

Pour the shrimp over the parsley salad

Drizzle with honey and serve with fresh Italian bread

I served this with a wedge of  melted brie.
