Wicked Twisted Mustard

Once upon a time there was a huge store called Spags.

It had everything from Milamo cookies to a lug wrench.

Well it closed.

It was a very sad day.

Finally after many years Whole Foods rebuilt the building and now there is a new modern shopping center.

It does not have the ambiance of Spags and they did name the restaurant after him.

So, I was wandering around the new clean store and found this nice gentleman and his son who was giving out tastings of their mustard. It’s a family recipe.

That did it..

I am sold .

There are three different flavors and I chose the “tangy.”

I ration it out like it was gold.

There is a little sweetness to it but the tang holds its own.

This is my new treat.

I love it, love it, love it.

This is a great hospitality gift with crackers, cheese and salami.

Great Tuna Salad

Tuna Salad

Nothing is better than a delicious tuna salad sandwich.

I can make tuna a million ways but every so often I love a good old mayo and tuna sandwich.

I do have a secret I will share with you…

Two cans of solid white tuna packed in water

Drain the water off and chunk the tuna

Three tablespoons of olive oil mayonnaise

One handful of crushed cheddar cheese goldfish crackers

One tablespoon of sweet relish

Mix everything together

Slice a piece of Italian bread in half

Put two or three big scoops of tuna on the bread

Add a handful of arugula and some sweet pickles

That’s  all there is.

Serve with chips

 

 

 

 

Meatloaf

All the kids are coming over and I wanted something that could be used as a leftover for sandwiches.

I forget about all these comfort foods that are so delicious plus it makes a great sandwich with my garden tomatoes.

2 pounds of ground veal

3 pounds of ground beef

6 Hamburg rolls or slices of  wheat or white bread

1 cup of old fashion oats

3 large eggs

1 1/2cups ketchup

1 cup of chopped parsley

3 tablespoons butter

2 chopped onions

3 cloves of garlic

1 ten ounce package of chopped mushrooms

1 teaspoon black pepper

1/2 teaspoon salt

Chop the onions,garlic and mushrooms in the food processor.

Saute them in the butter just until the onions are soft.

Process the Hamburg rolls till they look like crumbs

Process the parsley till it is chopped

Mix everything together very well.

Place in a slightly greases baking pan.

Bake in a 375 degree oven for 50 minutes.

Test with your meat thermometer because it may take more time.

I like my meatloaf well done so I tend to cook it longer.

Serve with mashed potatoes and corn.

Leftovers are the best.

Slice the meatloaf into a 1/2 to 3/4 inch piece.

Place the slice in a skillet and heat it up till there is a brown crust on both sides.

Place a slice of American cheese on top.

Take two slices of bread.

Put mayonnaise on one side and ketchup on the other side

One or two slices of tomato

A thin slice of vidalla onion

Three or four sliced pickles

One piece of lettuce just so we get something green.

Place the meatloaf on this, followed by the other slice of bread.

Hot peppers can be added if you like.

This is a two meal feast.

 

Buffalo Chicken Sandwich

Buffalo Chicken Sandwich

On November 9,  I gave you the recipe for Buffalo Chicken but today I am giving you the sandwich.

Start drooling.

This is so easy and you can even buy some pre made chicken and make a ton of these for you next party.

One package of dinner size potato rolls

One container of cheddar-blue cheese spread

chicken

thin sliced raw onion

arugula

blue cheese dressing

ranch dressing

beau monde sauce

Yogurt dill sauce

Dill pickle slices

pea shoots

slices of red pepper

Cook the chicken

Lay out the rolls

Spread one side with the blue cheese spread

Add the hot chicken so the cheese melts and gets really soft

Add the onion

Add the arugula

Add the pickle and a couple of pea sprouts

Now pick which dressing you like and add it to the other side of the roll.

Serve with the sliced red peppers on the side instead of chips.

Believe me the tray of sandwiches will disappear.
