Trying hard to be good. Only two more days and I can eat abnormally again. I do love a lot of food.

BUT…. this is healthy , delicious and fast.

Spaghetti squash

One firm spaghetti squash

3 cloves of garlic-minced

2 tablespoons of oil

one tablespoon of butter

salt and pepper to taste.

Wash the squash.

Slice it in half , starting at the stem. The long way.

Take out all of the seeds.

Place in a baking pan,  cut side down. Pour boiling water into the pan about half way up the squash. I put about a teaspoon of salt in the water

Carefully place in a preheated 400 degree oven for about 40 minutes or until you can pierce the skin with a knife.

Very carefully take out of the oven and remove the squash from the water.

Pat them dry with a paper towel.

Take a fork and going with the grain of the squash , scrape all the squash out of the skin. It should look like spaghetti.

Place all the squash into a bowl and top with the butter.

Slowly saute the garlic in oil till it is very light brown and pour it over the squash.

Mix well, season with salt and pepper.

Serve with a mixed arugula salad

You can also top with a  spicy red sauce.

I feel thinner already.
