Moaning Monday
Monday is that day when I feel the fattest and swear I can’t figure out why I gained five pounds over the weekend.
Anyone who watched me eat could find the answer.
Enough moaning.
Lets just try to eat better.
Almost all food is delicious so lets cook something really good.
Pan seared chicken is a staple. Fast ,easy and delicious.
One pound of boneless chicken
Marinate in one tablespoon of corn starch and one tablespoon of soy sauce.
Cut into thin strips
Two tablespoon oil
1/4 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
Two tablespoon of soy sauce
One teaspoon of fresh parsley
One sliced onion
One cup of cut broccoli
1/2 cup cooked edamame
Six cups of baby spinach
Two chopped scallions
Thin sliced carrots
One cup of grape tomatoes
Balsamic salad dressing on the side
Season the chicken with the spices
Heat the oil in a frying pan
Place the chicken in the frying pan. Don’t touch it until there is a crust on the bottom then turn
Add the onions and broccoli and cover with the soy sauce for three minutes
Pour over the salad. Top with only a couple of pita chips or chinese noodles. This is just for crunch.
You can make the chicken spicy by adding a dried chinese pepper or a jalapeno to the oil in the beginning ,before you add the chicken. This is my favorite.
When I am trying to eat less, I eat tastier food. It is more satisfying to me.
