Easy Pasta with Vegetables

This takes all of fifteen minutes.

One pound of pasta. I like to use a small rotelle, they are little spirals.

Salt for the cooking water

6 cloves sliced garlic

One sliced onion

1/3 cup olive oil

One package frozen mixed Italian vegetables. Defrost and discard the excess water.

One teaspoon powdered chicken soup

1/4 cup milk or cream

One package Jimmy Dean peppered white sauce mix

One cup boiling pasta water

2 tablespoon butter

Grated cheese for the topping.

Saute the onion and garlic in the oil

Add the defrosted vegetables and powdered soup

Saute till warm

Mix the white sauce mix and the boiling water till smooth.  Set aside

Cook the pasta

Drain well

Add the cream and butter to the pasta

Add  the vegetables

Add the white sauce and mix well

Serve on a bed of fresh spinach

Add the grated cheese on the top.

If you have any leftover chicken or any other protein, add it to the pasta.

So easy. So good.
