Chicken Pesto Tortillini Salad
I had made a bunch of pesto and froze it.
I took out one, one cup container.
I wanted to clean out my freezer and this was on the list to use with a one pound package of boneless chicken and a two pound package or cheese tortillini.
Boil the tortellini according to the package directions.
I always undercook mine because I like them chewy.
Rinse and drain
Place into a large bowl and add half the pesto then toss.
Combine the chicken, one large red pepper and one large red onion with 2 tablespoons of olive oil, salt and pepper.
Grill till everything is cooked well.
Slice everything into 1/2 inch pieces and place over the tortillini.
Add the rest of the pesto and toss
Add chopped parsley for garnish and a heavy sprinkle of parmesan cheese.
This can be served hot or cold.
