Butternut Squash Pappardelle

I wander around the grocery store looking for new food to cook. I found this butternut pappardelle squash that is amazing.

It tastes just like butternut squash but it is cut like pappardelle pasta and looks so pretty.

One box of pappardelle pasta

Ten cups of water

1/2 tablespoon salt

1/4 cup olive oil

One tablespoon butter

Three cloves diced garlic

1/2 teaspoon red pepper flakes

1/2 teaspoon salt

Boil the water in a big pot

Add the 1/2 tablespoon of salt

Add the squash

Cook for three minutes then taste it

Do not overcook

Keep it a little firm

Drain in a colander

Heat the oil and add the garlic

Cook till it is light tan.

Do not burn the garlic.

Add the red pepper flakes

Add the squash and coat it with the oil and garlic

Season with salt and pepper.

If it looks dry add a little of the cooking water.

This was so good and may I add, I ate all my vegetables.

I served this with a green salad and baked cod.
