Herring Salad

The first time I ate this I was at my mother-in-laws house.

This was my sister-in-laws special dish for the holiday.

I loved it.

So my sister in law gave me her recipe.

One 32 ounce jar of herring, drain, remove the onions and cut into bite-size pieces.

1 pint sour cream

3 tablespoons red wine vinegar

2 tablespoon white sugar

1/2 red onion cut into very thin slices

2  peeled, diced apples, macs are the best

One thin sliced carrot

Mix vinegar, sugar and sour cream together

Add the herring, onion, carrot and apples

Marinate overnight.

Serve with crackers.
