Tenderloin, Onions, and Croutons

I had to trim the tenderloin for Christmas.

All the scrapes went into a bag for the dog.

“WOOF, WOOF”

After everyone left I carefully cut up some of the meat for the dog but the rest I managed to salvage to make a decent size stir fry.

One large sliced onion

One tablespoon butter

About three cups of small cubed meat

One to two handfuls of croutons

Melt the butter

Add the sliced onion

Cook till it is slightly charred

Add the meat and cook till medium rare

Season with salt and pepper

Add the croutons to absorb all the juices

This should be enough for two but I finished it .

My dog did enjoy her portion.
