Easy Fish Soup

Fish soup in a pot ready to be served

One diced onion

3 cloves minced garlic 

one stalk diced celery

two tablespoons butter

one tablespoon olive oil

1 1/2 pounds cod, cut into teaspoon size pieces

2 cups frozen sliced carrots, defrosted

4 handfuls fresh baby spinach

2 cups frozen broccoli flowerets, defrosted or one teaspoon

4 cups chicken broth

one package adobo chili seasoning or one teaspoon

1/2 teaspoon dry dill

3/4 cup cream

salt and pepper to taste

Heat the oil and butter

Add the onion, celery and garlic

Cook till soft

Add the carrots

Cook for one minute

Add the broth and seasoning

Bring to a slow simmering boil.

Add the cod

Let it poach without touching it for five minutes.

Turn the heat to medium low.

Add the spinach and broccoli

Taste again for more salt

I like to combine red pepper flakes and black pepper.
