Grilled Lemon Shrimp

Grilled Lemon Shrimp

This is too easy to be so good.

One pound of U-20 cooked, peeled and de-veined shrimp.

You can use raw shrimp but make sure they are peeled, and de-veined.

The cooked shrimp was on sale for a great price so I couldn’t resist a bargain.

Marinade

One clove of minced garlic

Six tablespoons of olive oil

The juice of half a big lemon plus the zest

1/4 teaspoon salt

1/4 teaspoon pepper

2 tablespoons fresh chopped parsley

1/2 teaspoon brown sugar

Mix everything together in a blender and pour over the shrimp.

Marinate the cooked shrimp in the marinade for about 1/2 an hour

Preheat the grill to high

Put the shrimp on skewers and grill for about one to two minutes per side.

Serve with a tossed salad, brown rice and a vegetable.

This marinade can also be used for chicken or pork.

Grilled Pizza

Talk about easy.

This is it.

One pound of pizza dough

Olive oil

Salt

Divide the dough into four equal pieces.

Flatten each piece into a disc and brush on just a little oil and sprinkle with salt.

Place the disc on a dinner plate and put a piece of plastic wrap on top.

Repeat this for all the dough.

So its dough, plastic wrap, dough, plastic wrap and so on.

Take another plate and place it on top of all the dough and place it in the refrigerator till you are ready to grill.

Heat the grill to high and brush the grill with oil.

Take the plastic wrap off the dough and place the dough on the hot grill.

I usually only cook two or three at a time because they cook so fast and I am not that fast any more.

You can actually see the dough browning and bubbling  and thats when you flip it.

This takes maybe a minute or two.

Use  a spatula to flip , it is just easier.

Dont overcook the dough because you still have to put the toppings on and grill again.

I love the dough right off the grill.

What could be bad, dough, oil and salt.

Stack up the grilled dough and start getting all the toppings together.

Toppings

Tomato sauce, pesto,  olive oil, garlic, mozzarella cheese, muenster cheese, feta cheese, goat cheese,  ricotta cheese, parmesan cheese, sausage, pepperoni, spinach, onion, mushrooms, fresh tomato, peppers, olives or anything else you like.

I usually put everything out and everyone makes their own.

Its a pizza topping buffet.

After the toppings are on the dough, place the pizza on indirect heat and melt the cheese and warm the toppings.

About ten years ago I did this for my daughters birthday party.

It was pretty nice.

 

 

Steak Supper

Steak Supper

This is one of my favorite meals and so easy.

Start with a ribeye steak

olive oil

salt and pepper

Heat the grill

Brush the meat with the olive oil and sprinkle with salt and pepper.

Place on the grill for two minutes and turn 1/4 turn to get the nice grill marks for another minute

Turn over and repeat the turning to get the grill marks.

Grill to you’re liking or you can take the steaks off the grill and finish cooking in the oven for six to eight minutes.

Make a baked potato in the microwave and then fill with a pat of butter, salt and pepper and sour cream.

Boil the corn.

Mix a quick salad of cucumbers, red peppers and vidalia onions. Dress with some balsamic dressing.

I also cut thin slices of Italian bread and spread it with blue cheese.

Then I toasted them in the toaster oven to melt the cheese.

Great meal for fathers day.

A Caesar salad or lettuce wedges with blue cheese dressing is really nice with the steak.

Grilled pork sliders

This is the slider that I served  a couple of days ago.

Too good not to share.

6 Potato dinner rolls

3 boneless pork chops

1/2 cup Mojo marinade

6 thin slices of red onion

6 thin slices of gala apple

One teaspoon or less of balsamic mayonnaise per roll.

One teaspoon mango salsa per roll.

1/2 slice muenster cheese per roll.

pea sprouts

arugula

Marinate the pork in the Mojo overnight.

Grill till medium well and let sit for a while.

Slice on the thin side and set aside.

Assembling everything is so important to make it look pretty.

Here we go.

Slice the roll in half.

Mayo on both sides

3 to 4 Slices of pork, about half a chop in each roll.

Cheese

Onion

Apple

Arugula

pea shoots

Mayo

Roll

My kids love this with hot sauce.
