Grilled Pizza
Talk about easy.
This is it.
One pound of pizza dough
Olive oil
Salt
Divide the dough into four equal pieces.
Flatten each piece into a disc and brush on just a little oil and sprinkle with salt.
Place the disc on a dinner plate and put a piece of plastic wrap on top.
Repeat this for all the dough.
So its dough, plastic wrap, dough, plastic wrap and so on.
Take another plate and place it on top of all the dough and place it in the refrigerator till you are ready to grill.
Heat the grill to high and brush the grill with oil.
Take the plastic wrap off the dough and place the dough on the hot grill.
I usually only cook two or three at a time because they cook so fast and I am not that fast any more.
You can actually see the dough browning and bubbling and thats when you flip it.
This takes maybe a minute or two.
Use a spatula to flip , it is just easier.
Dont overcook the dough because you still have to put the toppings on and grill again.
I love the dough right off the grill.
What could be bad, dough, oil and salt.
Stack up the grilled dough and start getting all the toppings together.
Toppings
Tomato sauce, pesto, olive oil, garlic, mozzarella cheese, muenster cheese, feta cheese, goat cheese, ricotta cheese, parmesan cheese, sausage, pepperoni, spinach, onion, mushrooms, fresh tomato, peppers, olives or anything else you like.
I usually put everything out and everyone makes their own.
Its a pizza topping buffet.
After the toppings are on the dough, place the pizza on indirect heat and melt the cheese and warm the toppings.
About ten years ago I did this for my daughters birthday party.
It was pretty nice.
