Fast Tomato Sauce Tuesday
One of the most understated vegetables is the tomato.
I eat so many I should be red.
Meatless meals at least three to four times a week is not so bad and this is one my Mom used to make every week.
One pound of spaghetti
Six cloves of chopped garlic
Eight tablespoons of olive oil
Two cans of diced tomatoes including the liquid.
1/2 teaspoon of salt
3/4 teaspoon of dried oregano
eight basil leaves
one tablespoon of sugar
1/4 teaspoon of red pepper
Cook the pasta according to the package directions
Heat the olive oil
Saute the garlic till light brown
Add the tomatoes and spices
Bring to a boil and then simmer to reduce till slightly thickened.
Add the cooked pasta and heat till it is hot
Serve with grated cheese and crunchy bread.
Fabulous, Fast and inexpensive.
If you want you can add shrimp but I love this plain.
