Hot Wiener Wednesday
Growing up in N.Y. has made me an expert on hot dogs.
Till this day I have a hard time passing up a hot dog stand.
When I moved to Rhode Island they have these skinny hot dogs called wieners.
OMG they are great.
The trouble is I can eat four, five, six. I am such a hot dog pig.
BUT……
Since I did grow up in Brooklyn, I figured out how to make the fabulous red onions that you only can get on a New York hot dog.
The wiener sauce you can find on the Food Network website but mine is a deep dark secret.
Three big sliced onions.
Two tablespoons of canola oil
1/2 cup ketchup
Two heaping tablespoons of yellow mustard
1/4 teaspoon of crushed red pepper flakes or more if you like it hot
1/2 teaspoon of sugar
Saute the onions in the oil till soft.
Add everything else. That’s it.
Boil or steam a good hot dog.
I love Kayem natural casing.
Warm the rolls over the hot dog pot on a splatter screen.
Put the hot dog in the bun and top with two or three tablespoons of the onions.
Serve with french fries, corn on the cob and a ton of napkins.
