Mexican Monday
Mexican food is so delicious and fast.
This is a naked taco salad
One package of taco mix
One pound of Julienne sliced beef or chicken.
One large diced tomato
One head of chopped iceberg lettuce
Three chopped scallions
One chopped red pepper
One chopped jalapeno pepper
One chopped carrot
Three tablespoons of chopped cilantro
One small can of sliced black olives
Three tablespoons of sliced hot pepper rings or pickled jalapeno peppers
Three tablespoons of spanish olives
One cup of grated cheddar or Mexican cheese
One cup of salsa. Hot or mild depending on your taste.
Two chopped avocados drizzled with lime juice
Sour cream
Hot sauce
Lime flavored tortilla chips
Two cups of melted Mexican cheese
Cook the meat according to the package directions . Set aside
In a big bowl
Start with the lettuce, then the tomatoes, scallions, carrots, peppers, olives, avocados, cilantro, salsa, cheese, and sour cream. Top with the cooked meat.
Put the hot sauce on the side
Make a dish with the chips and melted cheese on top for the table.
The salsa is the salad dressing.
If you don’t eat a lot of chips this is a pretty low-calorie meal.
