Sunday slow down

Today we gained an hour of sleep. Why am I so tired?

Too tired to fuss in the kitchen.

I am going to give you a recipe I just found on pinterest but modified a little.

It is a one pot meal.


ten ounces of sliced mushrooms

one can of sliced artichoke bottoms

six sliced garlic cloves

one large sliced onion

one 48 ounce can of chicken broth

two cups of water mixed with two tablespoons of powdered chicken bouillon

one pound of fettuccine, broken in half.

two tablespoon of olive oil

1/2 teaspoon of dried oregano

1/2 teaspoon of dried thyme

six basil leaves

four ounces of fresh spinach

two cups of steamed broccoli

one tablespoon of butter

Saute the onion and garlic in the olive oil

Add everything else except the spinach and broccoli

Bring to a boil then stir, cover the pot with a lid and simmer for ten minutes.

Stir the bottom three or for times to make sure nothing is sticking

When the pasta is done add the spinach,  broccoli and  butter.

Taste for extra salt or pepper

Top with a handful of fried or crunchy onion strings

You can add any meat , fish or different vegetable  that you like.

Not bad for a one pot meal.

Serve in a bowl with a hot crusty roll and butter and a tomato salad.
