Woll up Wednesday

This is such an old recipe. My Mom made them for us when we where kids.

Mushroom Roll Ups

One chopped onion

1/4 cup butter

Saute onion in butter till the onions are soft.

Add

Clean and chopped 1/2 pound of fresh mushrooms

Saute for 5 minutes

Add

1/4 teaspoon thyme

1/2 teaspoon salt

1/2 teaspoon pepper

Blend in:

3 tablespoons flour

1/4 cup light cream or sour cream. I use sour cream.

Cook until thick

Toppings

Sprinkle with cheese

2 tablespoons minced chives

One tablespoon lemon juice

Cut the crust off bread and spread some of the mixture then roll up.

Brush with butter and bake till nice and crisp at 425 degrees.

Makes about forty.

That is the original recipe.

I add the mixture to  ready-made mini phyllo cups and bake till hot and bubbly

Either way is delicious

Bake in  a 425  degree oven
