Wrealistic Wednesday
Lets be real…. Instead of complaining, I am going to appreciate food but in moderation.
Some foods I can eat more of and some I eat less. ( I hope).
Lets give it a try because I have a lot of holiday recipes that are ready to print.
Very few are dietetic.
This recipe is actually not too bad so moderate overindulgence is permitted.
One of my favorite combinations is any hot meat with salad.
This recipe is a keeper because it is so pretty.
Beef with seared onions on arugula and oranges –
One pound of lean beef. This could be tenderloin, sirloin or london broil. Whatever you like. Chicken is also great.
Marinate the meat in;
1/4 cup low sodium soy sauce
2 teaspoons freshly grated ginger
2 cloves of minced garlic
2 tablespoons rice vinegar
2 tablespoons orange juice
Let the meat marinate for one hour or as long as possible.
Take out of the marinate and sear in a hot skillet for three to four minutes per side.
Take out of the pan and let it rest.
In the same pan add one tablespoon of canola oil.
Heat on high.
Sear two sliced onion quickly just to get a char on them but keep them crunchy.Season with salt , pepper and a 1/4 teaspoon of sugar. The sugar just adds sweetness to the onions.
In a blender, mix together;
4 tablespoons orange juice
2 tablespoons rice vinegar
2 tablespoons canola oil
one clove minced garlic
one tablespoon honey
1/2 teaspoon salt
1/4 teaspoon black pepper
Use a pretty platter and place about a pound of arugula on it.
My rule of thumb is one big handful per person.
Slice two navel oranges and arrange around the greens
Add some of the vinaigrette now .
Slice the meat into thin slices and place over the greens.
Top with the grilled onions.
Top with chopped scallions and fresh parsley
Add the rest of the dressing on the top.
Steamed broccoli, green beans or peapods on the side.
A small bowl of rice finishes the meal.
This is a fast and fabulous salad .
