Farro and Spinach
I love farro and I am always looking for new ways to make it.
This turned out delicious.
3 tablespoons oil
One pound bag of frozen chopped spinach
1/2 tsp. salt
1/4 tsp crushed red pepper
3 cloves minced garlic
3 tablespoons butter
one chopped onion.
2 1/2 cups farro
1/2 tsp. salt and pepper
32 ounces chicken stock
one cup water
1/2 cup white wine
3/4 cup half and half
1/2 cup fresh parsley
Parmesan cheese for the top
Saute the garlic and oil till light tan.
Add the spinach , salt and pepper.
Cook till all is warm. Set aside.
Saute the onion in the butter till soft.
Add the farro, salt and pepper.
Cook till all the butter coats the farro.
Add the wine and cook till it has evaporated.
Start adding the chicken broth one cup at a time.
Stir often till the broth has been absorbed then add another cup till it is all finished.
Then add the water and stir till that is absorbed.
Add the spinach and cream.
Taste for salt adjustments.
Place in a bowl .
Top with parsley and cheese.
This is like a healthy risotto.
Feel free to substitute any vegetable and change the flavor of the broth.
